1/3 c Soy sauce 1/2 ts Molasses 1/4 c Sesame oil 1/4 c Tahini 1/4 c Brown sugar 1 tb Chili oil 3 tb Balsamic or red wine vinegar 1/2 bn Sliced green onions Salt 1/2 lb Soba (Japanese - Buckwheat noodles) Heat soy sauce until reduced by half. Turn to low and add molasses. Warm briefly and transfer to bowl. Add remaining ingredients except noodles. Add salt to taste. Boil noodles about 3 minutes. Drain and plunge in ice water. Drain and rinse. Combine with sauce and chill. Makes 4 smaller servings at 467 calories each.

Other toppings that can be added to your soba noodles: - stir fried vegetables such as bean spouts, carrots, cabbage, onion and shiitake mushrooms. - you can add vegetables directly to the soup and cook for a few minutes on a low heat i.e. bean sprouts, asparagus, broccoli, shiitake mushroom, mange tout. - scrambled eggs - any meats i.e. beef, chicken, pork, duck breast - seafood i.e prawns, lobster, scallops, squid etc

For the Noodles & Toppings 200g of somyeon (per sauce), Korean wheat noodles or angel hair pasta (generous portion for 1 serving or 2 small servings) 1 cucumber, julienne 1 chili, optional 1 medium boiled egg, cut into half crushed sesame seeds
