How To make Spicy Spinach
3 lb Chopped fresh spinach
3 md Turnips, cubed
2 c Water
1/4 c Ghee
1 tb Black mustard seeds
1 lg Onion, chopepd
6 Garlic cloves, chopped
1 1" piece ginger, chopped
1 ts Turmeric
1/2 ts Red chilies
1 tb Garam masala
Salt Boil spinach & turnips in water for 12 to 15 minutes. remove & set in a bowl. Mash with a fork. Rinse the pot & heat the ghee. Add mustard seeds & a few seconds later add the onion, garlic & ginger. Cook til lthe onion is browned. Add turmeric, chili, garam masala & salt. Stir in the mashed vegetables. Cover & simmer for 5 minutes until all the liquid has evaporated, stirring occasionally. Serve. Rani, "Feast of India"

INGREDIENTS
(For Dough)
Wheat flour - 250 grams
Spinach - 70 grams
Gram flour - 20 grams
Coriander - 1 tablespoon
Garlic - 1 tablespoon
Cumin seeds - 1 teaspoon
Salt - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Asafoetida - 1/4 teaspoon
Red chili - 1/4 teaspoon
Yogurt - 30 grams
Oil - 1 tablespoon
Water - 80 milliliters
(For Spicy Garlic Sauce)
Garlic - 1 tablespoon
Ginger - 1 1/2 teaspoons
Green chili - 1 teaspoon
Water - 30 milliliters
Salt - 1/4 teaspoon
Red chili - 1/4 teaspoon
Garam masala - 1/4 teaspoon
Oil - 1 tablespoon

Wheat flour - for dusting
Ghee - for brushing
PREPARATION
(For Dough)
1. In a mixing bowl, add all the ingredients except water and mix it well.
2. Add 80 milliliters water and knead it into a smooth soft dough.
3. Rest the dough for 20 minutes.
(For Spicy Garlic Sauce)
1. In a blender, add 1 tablespoon garlic, 1 1/2 teaspoons ginger, 1 teaspoon green chili, 30 milliliters water and blend it well.
2. Transfer this into a bowl, add 1/4 teaspoon salt, 1/4 teaspoon red chili, 1/4 teaspoon garam masala, 1 tablespoon oil and mix it well. Keep aside.

1. Dist the floor with flour. Take a ball from dough and flatten it with the help of a rolling pin.
2. Brush it with the prepared mixture.
3. Fold it in a square shape and dust it with flour. (See Video)
4. Flatten it with the help of a rolling pin.
5. Place it on a hot tawa and cook on moderate heat for 2-3 minutes.
6. Flip it gently and brush it with ghee.
7. Flip to the other side and brush it with ghee.
8. Cook for 2-3 minutes on medium heat or until it turns golden brown in color from both sides.
9. Remove it from heat.
10. Serve hot.

Stir-Fried Chinese Spinach with Garlic Recipe

Ingredients :
350gm Chinese spinach
4 cloves of garlic, minced
White pepper powder
Sauce mix:
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp water
½ tsp of sugar
Oil for cooking
Some water to sprinkle
Method:
Heat up some oil in a wok over medium flame. Add in the minced garlic and stir-fry until fragrant.
Then, add in the spinach. Sprinkle a little water and cook until it is wilted.
Finally, add in the sauce and some white pepper powder and it’s done!
