How To make Spinach and Orzo Pie
-Pam Coombes 1 1/2 c Orzo(rosemarina)
2 Beaten eggs
1 15 1/2oz jar chunky spagh.
Sauce 1 c Grated Parmesan cheese
Nonstick spray coating 1 pk 10 oz frozen chopped spinach
1/2 c Low-fat ricotta cheese
1/4 ts Ground nutmeg
1/2 c Shredded part-skim
Mozzerella cheese
Cook orzo according to package directions; drain. Combine eggs, orzo 1/2 cup of spaghetti sauce, and the Parmesan cheese. Spray a 9" pie plate wi th nonstick coating. Spread orzo mixture over bottom and up sides of pie pl ate to form a shell. Cook spinach according to package directions; drain wel l. In another bowl stir together spinach, ricotta cheese, and nutmeg. Spoon into bottom of pasta-lined plate. Spread remaining spaghetti sauce over spinach layer. Cover edge of pie with foil. Bake in a 350F oven for 30 minutes. Sprinkle with shredded mozzarella cheese. Bake for 3-5 minutes more or till cheese melts. Let stand for 5 minutes before serving. Parmesan Spinach Orzo Recipe
-1 tablespoon olive oil
-1 onion diced
1/2 teaspoon kosher salt
-1/2 teaspoon black pepper
-1/4 teaspoon red pepper flakes
-4 cloves garlic minced
-1 Tablespoon Flour
-1 cup 2% milk
-1/4 cup LIGHT cream
-3 ounce grated Parmesan cheese
-5 ounce fresh baby spinach
-2 1/2 cups uncooked orzo pasta
Cook orzo in a large pot of boiling salted water for 7-8 minutes. Drain and place in a large mixing bowl.
Heat olive oil in frying pan, add onion, salt, pepper and red pepper flakes. Cook on medium low heat for about 15 mins until the onion has caramelized.
Add garlic and flour cooking for an additional 2 minutes. Add milk and cream stirring constantly until thickens. Turn off heat, add Parmesan cheese and mix well.
Place spinach on top of the cooked orzo and top with hot cream mixture. Let stand for 2-3 minutes to allow the spinach to wilt, and then stir.
Makes 14 one half cup servings (5 WW smart points)
This is a very delicious side dish, weight watcher friendly and I will be saving it in my recipe binder!

One-Pot Greek Lamb, Spinach & Orzo

Ingredients
3 pounds (1 and 1/2 kg) lamb, cut into cubes
1/3 cup olive oil
1 onion, finely chopped
5-6 garlic cloves, grated
15 oz (425g) crushed tomatoes
salt, to taste
freshly cracked black pepper, to taste
1 and 1/2 cups (250g) orzo pasta
4 cups water/broth
1/4 cup fresh lemon juice
1 pound (500g) fresh spinach leaves
optional: 1 teaspoon dried dill
2-3 tablespoons fresh chopped parsley
Serve with: olives, feta, bread
Instructions
Season the lamb with salt and pepper.
Heat olive oil in a large Dutch oven pot over medium heat.
Brown the lamb in 2-3 batches. Transfer to a plate and set aside.
Add the onion to the pot and cook until soft and golden.
Add the garlic to the pot and warm through until fragrant.
Place the browned lamb into the pot along with the tomatoes, salt, pepper, and enough water to almost cover the meat.
Cook over medium heat until the meat is tender. About 45 minutes-1 hour.
Add the spinach and cook until wilted.
Add the orzo, lemon juice, dill, a teaspoon of salt, and 4 cups of water or broth. Bring to a boil and reduce the heat to medium-low. Simmer for 15 minutes or until the orzo is al-dente.
Taste and adjust seasoning if needed. Garnish with parsley and serve with toasted bread, feta, and olives.
