How To make Stir Fry Beef & Snow Peas

1 lb Boneless sirloin steak 2 ts Cornstarch 1 tb Soy
sauce 1/2 c Peanut or vegetable oil 2 oz Cellophane noodles, uncooked 6 oz Frozen snow pea pods, thawed And drained 2 tb Peanut or vegetable oil 2 sl Fresh ginger (1" slices) 1 tb Peanut or vegetable oil 2 Carrots, scraped and cut in 1/8 inch slices 15 oz Baby corn, drained 15 oz Straw mushrooms,drained 1 ts Cornstarch 2 tb Soy sauce 2 tb Rice wine Partially freeze steak; slice diagonally across grain into thin strips. Combine 2 teaspoons cornstarch and 1 tablespoon soy sauce in a medium bowl, stirring until smooth; stir in steak. Cover and marinate in refrigerator 1-4 hours, stirring occasionally. Pour 1/2 cup oil around top of preheated wok or large
skillet, coating sides; heat at medium-high (375) for 2 minutes. Add noodles, a small amount at a time,
andstir-fry 2-3 seconds or until noodles expand and turn white. Remove noodles, and drain on paper towels; arrange in a ring on a serving platter. Drain excess oil from wok. Add snow peas to wok; stir-fry 2 minutes. Remove from wok, andarrange around edges of noodles. Pour 2 tablespoons oil around top of preheated wok, coating sides; heat for 2 minutes. Add steak and ginger; stir-fry 4-5 minutes or until steak is no longer pink. Remove from wok, and set aside. Pour 1 tablespoon oil around top of preheated wok, coating sides; heat for 2 minutes. Add carrot, corn, and mushrooms; stir-fry 3 minutes. Combine 1 teaspoon cornstarch, 2 tablespoons soy sauce and wine; stir until smooth Add cornstarch mixture to carrot mixture; stir fry 1 minute or until thickened. 300g Sirloin Beef Steak (or any cut of your choice)
Marinade: (30 Minutes in the fridge)
1 Tbsp. Light Soy Sauce
1 Tbsp. Dark Soy Sauce
1/4 Tbsp. Baking Soda
1 1/2 Tbsp. Corn Starch
1/2 Tsp. White Pepper
1 Tbsp. Peanut or Cooking Oil
Vegetables and Aromatics:
150 g Sugar Snap Peas
1/2 Large White Onion
1 Spring Onions
3 Cloves Garlic diced
2 cm Ginger grated
Sauce:
40 ml Chinese Cooking Wine (for non alcoholic version use water or chicken broth instead)
1 Tbsp. Hoisin Sauce
1 Tbsp Dark Soy Sauce
1 Tbsp. Light Soy Sauce
1 Tbsp. Toasted Sesame Oil
Chili Flakes To Taste

You know stir-frying is one of my favorite techniques because it's so easy and so flavorful. Done the right way, it can also be super fast! The secret to making a high-speed stir-fry is keeping it simple. This recipe requires only vegetable oil, skirt steak, and snow peas, plus a sauce made of garlic, ginger, hoisin sauce, and lime juice. Serve it with some cooked rice and fresh cilantro, and you'll never look back!

Retired Chinese restaurant chef, Dad Chen, teaches you how to make Stir Fry Beef With Snow Peas 雪豆(荷兰豆)炒牛肉 at home.
Ingredients:
Beef (Flank steak) : 8 oz or 230 g
Snow Peas : 7 oz or 200 g
Carrot : 30 g
Bamboo Shoots : 30 g
Baking Soda : ¼ tsp
Light Soy Sauce : 1 tsp
White Pepper : a dash
Garlic Powder : a dash
Egg White : 1
Cornstarch : ½ tbsp
Veg. Oil : 2 tsp + 1 tbsp
Minced Garlic : 1 clove
Green Onion Root : 1 sprig
Veg. Oil For Frying
Sauce:
Unsalted Chicken Stock or Water : ¼ cup
Light Soy Sauce : 2 tsp
Oyster Sauce : 2 tsp
Dark Soy Sauce : 1 tsp
Sugar : 1 tsp
White Pepper : a dash
Sesame Oil : ½ tsp
Cornstarch : ½ tbsp
