How To make Strawbery Banana Scones
2 medium bananas
mashed
1 cup strawberries :
peeled and chopped
2 tablespoons sugar
3 cups flour -- all-purpose
3 teaspoons baking powder
1 teaspoon salt
3 tablespoons butter softened
2 egg :
beaten slightly
Preheat the oven to 400 degrees.
Mix together the bananas, strawberries and sugar, set aside. (Don't do this much in advance, the bananas will blacken)
Mix together the flour, baking powder and salt. Mix well with a whisk. Using a pastry blender, mix in the butter until coarse. Still using the pastry blender, mix in the eggs, one at a time. Stir in the banana mixture. The dough will be very moist and messy. Knead it in the bowl enough to pick up all of the flour mixture. (It will still be very moist.)
Turn out the dough on a floured board, and flour the top of the dough so that flour coats the entire dough. Flatten with a rolling pin or your hands to 3/4".
Using a knife, cut the dough into squares, or large wedges, and lay onto an ungreased cookie sheet. Bake in the center of the oven for 15 - 20 minutes, or until lightly browned.

Ingredients
Scones
3 cups (300 g) all-purpose flour
¼ cup (50 g) sugar
1 Tbsp (15 g) baking powder
¼ tsp (1 g) salt
1 Tbsp (6 g) finely grated lemon zest
½ cup (115 g) cool unsalted butter, cut into small pieces
½ cup (125 ml) whipping cream
¼ cup (60 ml) 2% milk, plus extra for brushing
1 large egg
1 tsp (5 ml) vanilla extract
1 cup (160 g) fresh or frozen cranberries
Glaze
1 cup (130 g) icing sugar, sifted
1 ½ (22 ml) Tbsp lemon juice
Directions
Scones
1. Preheat the oven to 375 F and line a baking tray with parchment paper.
2. Sift the flour, sugar, baking powder and salt into a large bowl. Stir in the lemon zest. Cut in the butter until the mixture is rough and crumbly but still small pieces of butter are visible.
3. In a separate bowl, whisk the cream, milk, egg and vanilla together. Add this to the flour mixture and stir to just bring the dough together, turning out onto a work surface to complete bringing it together with your hands. Flatten the dough out and press the cranberries into the dough, folding it over and flattening it out a few times to incorporate the cranberries.
4. Shape the dough into a disc about 10-inches across. Cut the disc into 8 wedges and place them on the prepared baking tray, leaving a few inches between them. Brush the scones with a little milk and bake for 20 to 25 minutes until the scones are lightly browned on top. Cool completely before glazing.
Glaze
1. For the glaze, whisk the icing sugar and lemon juice together and drizzle over the scones using the whisk or a fork. Let the glaze set for an hour before serving.
2. The scones are best enjoyed the day they are baked.

Scones with Homemade Clotted Cream and Strawberry Jam Recipe
I made scones today.
I couldn't find clotted cream at a store, so I made it from fresh cream myself but I failed the first time.
Clotted cream is supposed to be cooked in the oven for 12 hours. I tried this recipe once but it didn't work well with 35% cream????

■Clotted Cream
Heavy cream or whipping cream 250ml
Unsalted butter 25g
■Strawberry jam
500g strawberrys
250g sugar
■Scones 9 pieces
300g flour
3 teaspoons (12g) baking powder
Pinch of salt
75g sugar
75 g Cold unsalted butter
25g egg
130ml cold milk
➢Clotted Cream 00:00
Put the cream and butter in a pot and stir it while simmering at low heat until reduced by half.
Put it in a container and keep it in a fridge.
➢Strawberry jam 01:31
Cut the strawberries in half, add sugar and simmer at low heat until reduced by half while stirring occasionally.
➢Scones 02:31
Sift flour and baking powder into a bowl.
Add sugar and salt.
Cut the butter into small pieces, add to the bowl, squish the butter with your fingers and mix with the flour.
Add beaten egg and cold milk to combine the dough.
Repeat the process of stretching the dough and folding it in three for 5 times.
Wrap the dough and refrigerate for 30 minutes.
Stretch the dough to a thickness of 2.5 cm and cut out shapes with a 5 cm mold.
Put the egg on the dough and bake at 200 ℃ (392F) for 15 minutes. - conventional oven

Make delicious scones with just 3 ingredients one of which includes fizzy lemonade. These scones are amazing and great to make if you need something nice in a hurry.
How to make 3 Ingredient Scones
3 Ingredient Scones
TIMINGS:
• Prep Time: 5 mins.
• Cook Time: 15 mins.
• Total: 20 mins.
SERVINGS:
• 8 Scones.
INGREDIENTS:
For the Scones:
• 2 cups (325g/11 ½ oz) Self Raising Flour.
• ½ cup + 3 tbsp (160ml/5.41 floz) Double/Heavy Cream.
• ½ cup + 3 tbsp (160ml/5.41 floz) Fizzy Lemonade (7up, Sprite etc)
Optional Extras:
• 2 tbsp Caster Sugar.
• 1 tsp Vanilla Extract.
• 1 egg or a little milk to glaze.
To decorate:
• Strawberry/Raspberry/Blackcurrant Jam.
• Whipped Cream.
• Icing/Powdered Sugar to dust.
METHOD:
1. Preheat the oven to the following temperatures.
200°C/400°F [Fan Oven]
220°C/440°F [No-Fan]
Gas Mark 7.
2. Line a baking tray with greaseproof paper.
3. Place the flour in a medium-sized bowl and add in the cream and fizzy lemonade.
4. Mix together until a soft dough forms, be careful not to overmix.
5. Place the dough on a floured surface and fold once or twice before patting it into a round shape about 4.5 cm thick.
6. Using a 2 ½ inch/6 cm round cutter cut the scones out.
7. Place on the prepared baking tray and brush with egg wash/milk.
8. Bake for 15 minutes until the tops are golden brown.
9. Allow to cool before serving with jam, cream, and dust with icing/powdered sugar.
10. Mmm Scrummy!!!
NOTES:
These scones won’t stay as fresh as my regular scones, but they can be heated up in the microwave or over and this will freshen them after a couple of days.
