How To make Summery Cuke Soup
2 ts Vegetable oil
5 Cucumbers
-- peeled, seeded & chopped 3 Garlic cloves
2 md Onions; chopped
2 1/2 c Vegetable broth
1/4 c Chopped fresh dill
Pepper; to taste 1 c Soy milk
In a large saucepan, heat the oil over medium heat and saute the cucumbers, garlic, and onions until onions are transparent, about 6 minutes. Add the broth and simmer until the cucumber is soft, about 15 to 20 minutes. Remove the soup from the heat and transfer to a blender or food processor and blend until smooth. While the mixture is still warm, stir in the dill and season with pepper. Chill. Stir in the soy milk just before serving. Classic Cucumber Soup
Ingredients for 4 generous servings
2 Lbs. English cucumbers*
1 cup fresh mint leaves
Grated zest of 2 limes
Juice of 2 limes
Optional: 1/2 of one jalapeno pepper, the seeds and ribs removed
1/4 cup heavy cream (or, use water)
2 cups plain Greek yogurt
1/2 teaspoon salt (or more, to taste)
1/4 teaspoon black pepper
1 teaspoon sugar
*You can use garden cucumbers if you peel and seed them first.
Gazpacho Easy Recipe - Cold Tomato Cucumber Soup
Today our magical trip will bring us to Spain. The spell of the day is an authentic gazpacho. I’ve been a fan of this refreshing chilled Spanish tomato soup for years. So let’s wiz this fresh summery spell right away!

Take 2 pounds of ripe Roma tomatoes, halve and core them. Peel and seed 1 small (1/2lb) cucumber, core 1 medium bell pepper (its color does not matter), peel 1/2 small red onion, mince 2 small garlic cloves, put all the ingredients into a blender or food processor. Add 3 tablespoons of olive oil, 2 tablespoons of sherry vinegar, 1 teaspoon of fine sea salt, 1/2 teaspoon of freshly-cracked black pepper, 1/2 teaspoon of ground cumin. You will also needs 1 thick slice of white bread soaked with the removed crusts. Now it is time to puree all the ingredients for 1 minute or until the soup reaches your desired consistency. Taste and season with extra salt, pepper, and/or cumin if needed. Refrigerate in a sealed container for 3 to 4 hours or until completely chilled. Serve cold, topped with your desired garnishes.

I prefer to garnish this soup with homemade croutons. Take some evenly sliced bread, add some olive oil and Italian spices. Bake it in the oven for 20 minutes, add it to your authentic gazpacho, and here we go!

1 English cucumber, peeled and cut into thirds
1 cup Greek yogurt or more
2-3 tablespoons fresh lemon juice
1 garlic clove, grated
2 scallions, thinly sliced
1 teaspoon dried dill or 1 tablespoon fresh dill
2 tablespoons finely chopped mint
Salt and black pepper, to taste
Garnish:
• 1 English cucumber, diced
• Mint sprigs
• Olive oil
INSTRUCTIONS
Combine all of the ingredients in a blender. Puree until smooth.
Taste and adjust seasoning if needed.
Chill in the refrigerator at least 2 hours.
Serve with your favorite garnishes and some toasted bread. Enjoy!
