BATTER:
1 1/2 c Flour; all-purpose
3 c Milk
2 Eggs
1 tb Sugar
1 ts Salt
Butter or oil for frying
GARNISH:
1 Lingonberry preserves; jar
Confectioners' sugar Butter Beat the eggs and add the milk and flour gradually along with the sugar and salt. Heat a platt pan or small frying pan over low heat and brush with oil or butter. Stir the batter well and cook thin and light pancakes. Serve with butter, lingonberry preserves and a bit of confectioners' sugar. You really should find a Swedish Platt pan for this. It makes small pancakes, about 3 inches in diameter, which are very much enjoyed by the Scandinavian 2 community. You can certainly make them in a larger form, but the little

Swedish Pancakes Recipe (Plattar)
Learn how to make Swedish pancakes! This authentic Swedish pancakes recipe comes from my wife's great-great grandmother, Anna Boerjeson, from Smaland, Sweden. The batter makes roughly 40 pancakes.
Known in English as Swedish pancakes, this delicate, crepe-like cakes are sweeter and smaller than American pancakes, served with lingonberry preserves instead of maple syrup. Moist on the inside, crisp on the outside, they are topped with a tart-sweet dollop of lingonberry preserves. Lingonberries, a member of the cranberry family, grow in the mountainous regions of Scandinavia.
Swedish Pancakes Recipe ingredients
3 eggs
2 cups heavy cream
1 cup all purpose flour
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons melted unsalted butter
14 1/2 ounces sweetened wild lingonberries (or substitute raspberry preserves)
Directions
1. Beat eggs with whisk in large mixing bowl. Beat in cream, flour, sugar and salt.
2. Whisk until smooth. Then blend in 4 tablespoons of butter.
3. Heat in a large skillet or a Swedish pancake pan or an electric fry pan. Over medium high heat, brush lightly with melted butter. Drop the batter on the pan by tablespoonfuls.
4. Swedish pancakes should be a little smaller than a coffee can lid.
5. Cook until golden brown on the bottom, about 2 minutes. Then turn over and cook 1-2 minutes longer.
6. Keep the cooked pancakes in a warm heated oven at about 225 F in a partially covered dish while preparing remaining pancakes.
7. Serve a small amount of lingonberries on top of individual pancakes.Yield: Serves 8 people with 2-3 pancakes each

SWEDISH POTATO PANCAKES
Recipe
Swedish potato cake (rårakor)
Ingredients
500g waxy potatoes
8g or 1 1/2 tsp salt
Oil and unsalted butter to fry in
Sweetend lingonberry (
Green bacon (unsalted bacon)
Instructions
1. Peel and grate the potatoes coarsely.
2. Put them in a bowl and add the salt.
3. Mix them carefully with your hands until combined.
4. Heat a pan to medium heat and add oil and butter.
5. Fry until golden brown and flip. Directly, add some extra butter to the pan and swirl it around so the edges get extra crispy.
6. When it's golden brown on both sides, it's ready to be served.
7. Serve with sweetened lingonberries and green bacon (unsalted bacon)

Ingredients

2. Add the egg, flour, and mineral water to a bowl and stir to combine.
3. Add the grated potatoes, salt, and pepper. Stir to combine.
4. Heat a pan to medium heat and add oil and butter.
5. Fry until golden brown and flip. Directly, add some extra butter to the pan and swirl it around so the edges get extra crispy.
6. When it's golden brown on both sides, it's ready to be served.
7. Serve with sweetened lingonberries and green bacon (unsalted bacon)
My version of a more modernized Swedish potato pancake (raggmunk)
Ingredients
400g waxy potatoes
4g or 1/2 tbs all-purpose floor
250ml full-fat milk
2 eggs
50g melted butter
50g or 1/2 grated onion
10g or 1 3/4 tsp salt
50ml sparkling water
Instructions
1. Peel and grate the potatoes coarsely.
2. Add all the flour and half the milk to a bowl. Whisk until you have a smooth batter.
3. Add the rest of the milk and the eggs. Whisk to combine.
4. Add the melted butter and your grated onion.
5. Pour in the salt and give it a quick stir.
6. Add your grated potatoes to the bowl and mix well.
4. Heat a pan to medium heat and add oil and butter.
5. Fry until golden brown and flip. Directly, add some extra butter to the pan and swirl it around so the edges get extra crispy.
6. When it's golden brown on both sides, it's ready to be served.
7. Serve it with lumpfish roe and sour cream (or this typical Swedish soured cream if you can find it:

BALLSTON LAKE -- A retired Swedish chef taught students in Ballston Lake how to make Swedish pancakes on Sunday.
The Capital Region BOCES students showed off their new skills at a pancake breakfast at the Burnt Hills Fire Department. The event benefited a Scotia-based organization called Vasa Tegner 109.
The chef, Anders Faltskog, was a culinary instructor at Votech for nearly 40 years. Some of his students went on to have very successful cooking careers, even working at the White House.
