1 3/4 c Plain yogurt 4 Ice cubes 1 1/4 c Ice cold water 2 ts Lemon juice 2 tb Sugar Ice cubes 1/2 ts Cumin seeds, crushed Lemon slices Fresh mint sprig (opt) In a blender or food processor, blend yogurt, 4 ice cubes and ice cold water 30 seconds. Add lemon juice and sugar and blend mixture again until thoroughly combined. Pour mixture over ice cubes in glasses and sprinkle with crsuhed cumin seeds. Garnish with lemon slices and mint sprig, if desired.

Ingredients: Curd - 1.5 kg Sugar - 200 grams Ice cubes 1/2 cup Mango Pulp 1 pinch saffron 3 tbsp rose syrup 1 pinch green cardamom seeds Rose petals Avocado Kiwi Almonds 2 tbsp Blue Curacao syrup 1/4 tsp Bubblegum Essence
Method of Preparation: 1. Take few cups of curd in a blender jar, add sugar, ice cubes and blend it. After its done, transfer it straight in a glass. Your classic lassi is ready. 2. In a blender jar take a glass of classic lassi and add mango pulp, few strands of saffron and blend it. Transfer your Mango & Saffron lassi to a glass and garnish it with saffron. 3. In a blender jar take a glass of classic lassi and add rose syrup, green cardamom seeds and blend it till its nice and creamy. Once it is done transfer it to a serving glass and garnish it with rose petals. 4. In a blender jar take 1/2 glass of classic lassi and add avocado and kiwi. Once it is done transfer it to a serving glass and garnish it with almonds. 5. In a blender jar take a glass of classic lassi and add blue curacao syrup, Bubblegum Essence. Blend them nicely. Once it is done transfer it to a serving glass.

2½ cups dahi (yogurt) ¾ cup powdered sugar ½ tsp green cardamom powder 2 tsps rose water 10-12 ice cubes ½ cup milk Slivered almonds for garnish Slivered pistachios for garnish Dried rose petals for garnish
Method
1. Put dahi in a blender jar, add powdered sugar, green cardamom powder, rose water, ice cubes and milk and blend to a fine mixture. 2. Pour the lassi in the serving glass, add a portion of malai, slivered almonds, slivered pistachio and dried rose petals. Serve immediately.

Punjabi Lassi Recipe:
Curd - 2 Cups Sugar - ½ Cup (100 gms) Cardamom Powder - ¼ tsp Saffron - A Few Strands Rose Water - 1 tsp Water (Chilled) - ½ Cup Ice Cubes - As Needed
Garnish:
Mixed Nuts (Chopped) - 1 tbsp
Cooking Instructions:
1. In a bowl, churn the curd well until smooth.
2. Add the sugar and continue churning until all the sugar has dissolved.
3. Add the chilled water, rose water, saffron, and cardamom powder.
4. Churn until an upper froth layer forms.
5. Transfer to a glass with ice cubes and garnish with chopped nuts.
