How To make Sweet Pinto Pie
1 Baked pie crust
crumb or regular 2 lg Onions; chopped
2 c Cooked AM Pinto Beans
:
(unseasoned), drained 1/2 c Water
-OR- unseasoned bean juice 2 tb Cinnamon
1 ts Nutmeg
1/4 ts Sea salt (optional)
2 tb Honey or molasses (optional)
Saute the onions in the oil over medium heat until very soft and clear. Watch carefully so they do not brown. Blend the cooked onions, beans, water, and seasonings until smooth. If more sweetness is desired, add the honey and blend. Spread in the baked pie crust, and bake 15 to 20 minutes at 350 F. My Brother's Bean Pie
This episode of Keeping It Real Kitchen (KIRK) we will prepare two bean pies in preparation for Thanksgiving / Turkey Day.

My Brother's Bean Pie

Ingredients:
2 9-inch deep-dish pie crusts
2 (15 ounce) cans great northern/navy beans, rinsed and drained, low/no sodium & unseasoned
1 (12 fluid ounce) can evaporated milk
1/2 cup butter, melted
1and 1/2 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
2 tablespoons all-purpose flour
2 cups of brown or dark brown sugar
2 tablespoons vanilla extract
2 eggs
Directions:
Prepare pie crusts ahead of time.
Preheat oven to 450 degrees F (230 degrees C).
In a food processor or blender, add the navy beans, evaporated milk, melted butter, cinnamon, nutmeg, flour, sugar, vanilla extract, eggs. Pulse the mixture a few times, then blend or mix until smooth for about 1 minute.
Pour the filling into the prepared pie crusts.
Bake at 450 degrees F (230 degrees C) for 15 minutes, then reduce heat to 350 degrees F (175 degrees C) and bake until the filling is set and the crust is golden brown, an additional 35 minutes.
Let cool a day or two in the refrigerator before serving to let the ingredients set and to achieve maximum flavor.

As y'all know, I love old southern recipes. I grew up on them and still can't get enough of them today. This is an old Appalachian recipe that I came across in an old recipe box I found at a flea market a few years ago. Some of you may cringe at the fact that this is a pie made with pinto beans. But you have to remember that back in those days you didn't let anything go to waste. So if you had a cup or so of beans left you made something out of them instead of throwing them out. Also a great Thanksgiving pie.
