Cheesy Taco Meatballs #shorts
Tacos + Meatballs = Greatness.
For the meatballs:
1 pound ground beef (we used aged ground beef)
1/4 cup finely diced onions
1/4 cup finely crushed Doritos
1 T chipotles in adobo
1 T taco seasoning (we used Cattleman’s Grill 8 Second Ride)
3 T finely diced cilantro
1 egg
1. Mix the above ingredients together in a bowl, then divide into 8 evenly sized meatballs.
2. Cut 8 cubes the size of sugar cubes of a good melty cheese (us used Velvet Queso Blanco)
3. Press the cheese into the meatball and reform the meatball to fully encase the cheese.
4. Roll the meatballs in finely crushed Doritos (we estimate you will need about a quarter of a family sized bag).
5. Chuck your meatballs into the fryer and cook for 5 minutes.
6. Allow a few minutes to cool, then serve and enjoy!

Taco Meatball Ring | Grilled Appetizer | Grill Dome Recipe
One of my all-time favorite Grilled appetizers! I have cooked the Taco Meatball Ring on a grill, in a Dutch oven and in my Kitchen, this time we are grilling them on the Grill Dome. With this very simple recipe, you can have these baked and served in under one hour. Nothing beats a grilled appetizer!
Taco Meatball Ring ingredients:
2 cups about 8 oz shredded cheddar cheese, divided
2 tbs. of water
2-4 tbs. of taco seasoning
½ lb ground beef or turkey
2 tubes (8 oz each) refrigerated crescent rolls
½ medium head of iceberg lettuce, shredded
1 medium tomato, chopped
4 green onions, sliced
½ cup ripe olives, sliced
2 jalapeno peppers, sliced
Sour cream and salsa (optional)

Saucy Mexican Meatballs Appetizer Recipe
Watch as Better Homes and Gardens shows you how to make meatballs with a Mexican flair for your next party! Everything you love about meatballs is given a southern spin here. You can serve up these Mexican appetizers with little slices of bread to dip into the flavorful sauce. Before you dive into making meatballs, preheat your oven to 350 degrees. In a large bowl, pour in 1/2 cup of Masa Harina and 1/4 cup of warm water. Masa Harina is just a corn-based flour you can use to create authentic Mexican cuisine for these homemade meatballs. Stir these ingredients together and add to them 1 pound of lean ground pork, 1 pound of lean ground beef, 1 beaten egg, four cloves of minced garlic, 1-1/2 teaspoons of salt, and 1/2 teaspoon of freshly ground black pepper. Use your hands to mix everything together well and begin forming them into 1-inch cocktail meatballs, using your palms to roll them together. This meatball appetizer recipe should create between six to eight dozen meatballs. Place them on a 15 x 10 x 1-inch baking pan and bake for 20 to 25 minutes. While the party meatballs are browning to perfection, let's get started on the sauce. In a food processor, pour in a 28-ounce can of whole tomatoes, juice and all, along with three drained Chipotle chili peppers in adobo sauce. Puree the peppers and tomatoes together, pressing it through a sieve over a small bowl once they're pureed to remove the tough skins. Pour 1 tablespoon of cooking oil into a Dutch oven over medium heat. Once the oil is heated, add to the Dutch oven 1/2 cup of finely chopped onions and two cloves of minced garlic. Cook until the onion is tender and add the meatball sauce, 1-1/2 teaspoons of instant chicken bouillon granules, and 1 teaspoon of ground cumin. Bring the sauce to a boil then reduce the heat to medium and let simmer uncovered for ten minutes. Add the meatballs to the Dutch oven to coat them and give them one last layer of flavor. This recipe for meatballs makes a large batch, making them perfect party appetizers to give your get together a bit of a fiesta flair!
