How To make Tofu Cookie
1 1/2 c Whole-wheat flour
3/4 c Raisins
1/4 c Dates; chopped; or prunes
1/2 c Nuts; chopped
1/2 ts Baking soda
1/2 c Honey
1/2 lb Tofu
1 Egg
1/2 c Butter; softened; or oil
1 ts Ginger
1 ts Cinnamon
1 ts Nutmeg
1/2 ts Salt
1 ts Vanilla
In a 2-quart bowl, mix flour, raisins, dates, nuts and baking soda together. In a blender or food processor, blend the remaining ingredients. Mix wet and dry ingredients together. Drop by teaspoonfuls onto oiled cookie sheet. Bake at 350~ for 10-15 minutes. These cookies can be made ahead of time and frozen. Or, kept in a tin box for a few days. Pat Dwigans -----

簡単豆腐クッキー♪絹ごし豆腐を使用した絞り出しクッキーレシピ♪少し硬めの食感が食べ応え抜群!
◆ ポイント
① 薄力粉を入れる前、袋を用いしっかり混ぜる!
② 薄力粉を加えてからは練らない!切る様に混ぜる!
③ 焼き時間はクッキーの大きさによって調整下さい!(20~30分)
◆ 材料
<約30枚分>
絹ごし豆腐…100g
薄力粉…100g
砂糖…50g
サラダ油…40g
はちみつ…大さじ1
◆ 作り方
1. 薄力粉以外を袋に入れしっかり混ぜる。
2. ボールに移し、薄力粉を加える。
3. ゴムベラで切る様に混ぜる。
4. 星形の口金で絞り袋を作る。
5. 生地を絞り袋に入れる。
6. クッキングシートを敷いた天板に絞り出す。
7. 170℃に予熱したオーブンで20分焼く。
8. 粗熱を取る。

11. 粗熱を取る。
12. 皿に盛り付ければ完成。

INGREDIENTS

100g Okara
100g All purpose flour
50g Sugar
2 tablespoons olive oil
2 tablespoons soya or nut milk
Optional:
Unroasted almonds
Raisins
Chocolate chips
MAKING BISCUITS
-----------------------------
1. Mix all ingredients together till they form a ball.
2. Divide the dough into individual portions (approx 16 biscuits)
3. Line a baking tray with tin foil and grease lightly
4. Bake the dough in 170°C (325°F) for 25-30mins
