Making with Gunner. Tomato Soup Cake!
Filmed on 8-30-2023: This week we made a cake that has tomato soup in it. Yes, it sounds gross, but it is actually very good. It is a recipe from the great depression and Mommy wanted to see if Nanny remembered it. She just turned 95 last month and she actually did remember making cake with condensed tomato soup! As usual, Mommy creamed the butter and sugar before we started. Gunner was actually helping this week too. Sorry for the bad recording, missing most of his head... He is getting too tall and Mommy forgets to change the angle on the tripod. The recipe calls for pumpkin spice, but Mommy and Daddy do not like cloves, so we used the optional spices of just cinnamon and nutmeg. Mommy forgot to write down how much of them so there is a skip in the video because she had to use her phone to see the recipe LOL. Gunner did a great job stirring until he didn't LOL. Made a big mess but that's OK. Just a wet paper towel to the rescue! Gunner also liked the raw ingredients, as per usual, and he liked licking the spoon of cinnamon, and then all the mixing implements. Gunner did well breaking the eggs and incorporating the ingredients into the mixer. Gunner also enjoys smelling the batter and watching the mixer. We do have a cat and a dog, so stray hairs do sometimes make an appearance, but Mommy gets them out! Once Mommy put the cake in the oven she did the dishes and we jumped right into making the frosting. Again, Mommy started with creaming the butter. Gunner learned the hard way that vanilla extract smells yummy, but it doesn't taste yummy YUCK LOL. Every chance Gunner got, his fingers were in the frosting mix... Once Gunner tried the powdered sugar, he tried to eat it all. Guess we are going to have to make fried dough soon. Gunner threw a fingerful of frosting and it plopped on the floor, he promptly went over and licked it up... are your kids gross too? LOL. Daddy has a love of flashlights, he has a lot of them, and he is passing that down to Gunner. Gunner loves running around with the lights off using a flashlight. Mommy didn't notice the flashlight Gunner had while making the frosting, so sorry it is shining at the camera. Once the frosting was done, we headed out to the store and Gunner got a new bike. He outgrew his balance bike so Mommy and Daddy were excited to get him an actual bike. Unfortunately, it didn't work out well so we returned the first bike. It was too small and the design of it was weird. We got him another one from Amazon, it's 14 and really nice. He enjoys it. But that is why Gunner kept honking his bike horn when Mommy was icing the cake. He was very excited. Again, the camera angle is off. Mommy promises to double-check it next time. And Gunner didn't want to help Mommy ice the cake, he just wanted to eat the frosting! We all really enjoyed this cake, and when we brought it to Nanny, everyone over there liked it too. You would never guess that it has tomato soup in it, it tastes like a spice cake. Think carrot cake. It tasted of warming autumn spices and the frosting wasn't super sweet. Gunner's great-aunt doesn't like cake much, but after she had a small bite, she took a whole piece! So yeah, it's that good!
Recipe:
Tomato Soup Cake - 13 x 9 pan
Ingredients
For the Cake:
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tsp pumpkin pie spice
1/2 cup unsalted butter, room temp
1 cup granulated sugar
2 large eggs, room temp
1/4 cup whole milk, room temp
10.75oz can of condensed tomato soup
Brown Sugar Frosting:
1 cup unsalted butter at room temperature
1/2 cup brown sugar
2 tsp vanilla extract
1/4 tsp cinnamon
1/8 tsp salt
3 1/2 cups powdered sugar
3 to 5 tbsp heavy whipping cream at room temperature
Instructions
1. Preheat oven to 375 degrees, spray a 9×13 baking dish with nonstick cooking spray.
2. Whisk flour, baking powder, baking soda, salt, and pumpkin pie spice.
3. Beat together the butter and sugar until light and fluffy, 7-8 minutes.
4. Add in the eggs, milk, and condensed tomato soup; beat until well blended.
5. Add in the flour mixture.
6. Pour and spread evenly into the prepared baking dish.
7. Bake the cake for 30-35 minutes.
Frosting:
1. Beat butter on medium speed for about 2 minutes or until creamy and lightened in color. Add brown sugar, vanilla extract, cinnamon, and salt until combined and smooth.
2. Add in powdered sugar, 1 cup at a time, until sugar is incorporated, scraping down the bowl several times to ensure everything is well blended.
3. Slowly beat in 3 tablespoons heavy cream, increasing speed to high and beating for 1 more minute until the frosting reaches the desired consistency. Add in more heavy cream, 1 tablespoon at a time, only if necessary. Frosting should be light and fluffy, and easily spreadable, but hold its shape.
4. Spread frosting over the entire cake, cut into squares, and serve.

Let's bake one of the famous midcentury tomato soup cakes! - Recipe Below.
MY COOKBOOK:
-- Ingredients: CAKE
2 Tbsp margarine/butter
1 Cup Sugar
1 Can condensed tomato soup (10.75 ounce)
2 Cups flour
1 tsp each of: ground cloves, ground nutmeg, ground cinnamon
1/4 tsp salt
1 tsp baking soda
-- Ingredients: FROSTING
3 oz cream cheese
3 Tbsp whole milk
3 Cups confectioner's sugar
1 oz bitter or bittersweet chocolate
1 tsp vanilla extract
1/4 tsp salt
(Alternate Frosting: 1/4 cup whole milk + confectioner's sugar until thick)
--METHOD--
1.) Cream sugar into margarine/butter
2.) In a separate bowl mix together the flour, spices and salt. Sift if desired
3.) In yet another separate bowl, mix together the tomato soup & soda.
4.) Alternate adding the soup mixture & the flour mixture into the creamed butter/margarine
5.) Turn into a greased & floured loaf tin and bake at 350ºf for 45-55 minutes. OR until a toothpick inserted into the centre of the cake is clean when removed.
--FROSTING METHOD--
1.) Beat cream cheese until smooth. Be sure to scrape down the sides of the bowl through the process.
2.) Gradually add milk, beating until smooth.
3.) Gradually add confectioner's sugar, beating until smooth
4.) Add chocolate, salt, and vanilla. Beat until consistent.
5.) Frost the cooled cake (cake with this frosting should ideally be eaten within 1-2 days)
