How To make Truffes Pralinees (Praline Truffles)
1/2 lb Good chocolate
About 1/2 glass water 3 Egg yolks
3 oz Butter
1 1/2 oz Praline paste
Slowly melt the chocolate in the water, bring to a gentle boil, remove from the fire, and add the yolks, beating with a spatula, then replace on a low fire to poach the eggs in the chocolate. Do not stop beating. Remove from the fire and add the butter and the praline paste. Let cool, beating from time to time (this cooling takes a rather long time). When the mixture begins to solidify, take some with a spoon, place it in some grated chocolate (prepared in advance), and shape to resemble real truffles. These truffles keep a week. Trüffel Pralinen / Pralinen Rezept
Trüffel Pralinen / Pralinen Rezept (Rahmen 40cm x40cm)
Zartbitterkuvertüre - 690g
am besten geeignete Kuvertüre:
Valrhona Guanaja 70%, 1kg -
Obers - 750g
Glucose oder Honig - 300g
Transferfolie -
Ruckzuck -
Legen wir los!
Als erstes kochen wir das Obers mit der Glucose auf. Sobald das Obers aufkocht können wir die Kuvertüre beigeben. Mit einem Mixstab schön homogenisieren und etwas abkühlen lassen. In der Zwischenzeit können wir uns etwas Kuvertüre auf 35-37C° schmelzen und unseren Rahmen oder Distanzstäbe mit Kuvertüre wie im Video gezeigt beschleichen und auf eine Transferfolie oder Frischhaltefolie kleben. Jetzt können wir auch unsere Pralinenfüllung einfüllen.
Die Trüffel Pralinen müssen jetzt für 24h in einem kühlen Raum fest werden. Sollten diese am nächsten Tag noch zu weich sein, einfach kurz in den Kühlschrank geben. Jetzt schneiden wir die Pralinen mit einem Messer aus der Form und bestreichen die Oberfläche mit der leicht übertemperierten Kuvertüre (35-37C°). Sobald die Kuvertüre anzieht, kann ich die ganze Platte wenden und die Folie abziehen.
Ich teile jetzt meine Pralinen auf 2x2cm breite Stücke ein. Dafür verwende ich eine Harfe, aber natürlich könnt ihr auch ein Messer oder zum einteilen einen Ruckzuck verwenden.
Sobald die Pralinen geschnitten sind, werde ich diese nur noch in Kakao wälzen und fertig sind unsere Zartbitterkuvertüre Pralinen. Somit bleibt mir nur noch zu sagen, viel Spaß beim nachmachen und man sieht sich beim nächsten Video.
