How To make Truffes Pralinees (Praline Truffles)
1/2 lb Good chocolate
About 1/2 glass water 3 Egg yolks
3 oz Butter
1 1/2 oz Praline paste
Slowly melt the chocolate in the water, bring to a gentle boil, remove from the fire, and add the yolks, beating with a spatula, then replace on a low fire to poach the eggs in the chocolate. Do not stop beating. Remove from the fire and add the butter and the praline paste. Let cool, beating from time to time (this cooling takes a rather long time). When the mixture begins to solidify, take some with a spoon, place it in some grated chocolate (prepared in advance), and shape to resemble real truffles. These truffles keep a week. How to make Chocolate Ganache Truffles [ASMR cooking]

Chocolate ganache filling
220g dark / milk chocolate
120g heavy cream
1 tbsp instant coffee
30ml rum / whiskey (if you don't use alcohol, use 30ml heavy cream instead)
For Coating (4 types of truffles)
150g dark chocolate
15g vegetable oil
100g white chocolate
10g vegetable oil
about 1 - 2 tbsp cocoa powder
about 30g - 40g chopped hazelnuts

Chocolate Truffles | How to make Chocolate Praliné Truffles Recipe
Chocolate Truffles are easy to make and perfect as a gift for Christmas, New Year's Eve, Birthday, Valentine's day... . and very fun to make with your kids!
Just make a perfect ganache and you have it!
These truffles are rich, fudgy, and creamy.
Ingredients:
275 g of dark chocolate
180 g of milk chocolate
150 g almond /hazelnuts praliné
300 g cream (liquid )
20 g honey
54 g butter
Direction:
1/ melt the chocolate in a saucepan
in a bain-marie or in the microwave
2/ Boil liquid cream with honey
3/ Add praline to the melted chocolate and mix.
4/ Add the cream gradually to chocolate 5 in three times).
5/ Finally add the butter when the temperature of the mix had reached 32° Celsius.
( or when you touch the chocolate with your finger and you support the temperature so you can add the butter).
Let crystallize for a few hours. Shape the ganache into a small ball (each ball = 10g) then roll them in unsweetened cocoa powder
2 times for perfect truffles as is shown in the video.
