1 pk Onion soup mix 1 c Sour cream 1/3 c Mayonnaise 2 c Minced cooked turkey 1/2 c Pecans, finely chopped 1 tb Pimento, chopped 2 tb Parsley, minced Paprika Assorted crackers Combine soup mix with sour cream and mayonnaise. Stir in turkey, nuts and pimento. Refrigerate for several hours for flavors to meld and mixture to thicken. Mound on a platter, sprinkle with parsley and paprika. Serve chilled with crackers. Makes about 2 cups.

For cooking you need: Turkey liver (can be replaced with chicken liver) - 300 g Goose greace on the skin (can be replaced with butter) - 150 g Goose meat (can be replaced with red meat of any bird) - 150 g Onion - 300-350 g Cream - 50-70 ml Butter - 70-100 g Salt - 0.5 teaspoon Dry provencal herbs - 0.5 teaspoon Ground nutmeg - 0.2 teaspoon Orange / Mandarin - 1 pc Cognac - 10 ml
Cooking process: Slice goose greace into small pieces and melt the fat out of it in a saucepan. Remove the cracklings and some of the rendered fat from the saucepan to fill the finished pate. Slice onion into cubes and place it in the saucepan to fry. Slice goose meat into small pieces. Remove the membrane from turkey liver and slice it into small pieces. Add the goose meat and the turkey liver to the onions and continue frying. Add salt, aromatic herbs and nutmeg. Fry the liver and the meat over low heat until the blood disappears. Pour cream into the saucepan, fry for another 3 minutes over low heat. Grind the cooked liver with a blender. Add room temperature butter and stir until evenly combined. Transfer the finished pate to a storage container. Fry slices of orange or mandarin on the goose fat on both sides, pour over with cognac and set on fire. The vapors of alcohol will burn out, and the orange will have an exquisite aroma of the cognac, which it will transfer to the pate. Pour the melted goose fat over the pate and place orange flambe circles on its surface. Serve the dish chilled with fruit jelly.
