How To make Unusual Chinese Grilled Shortribs
4 ea Large, Meaty Shortribs
1/3 c Oriental Toasted Sesame Oil
4 1/2 T Peanut Butter
4 T Brown Sugar
2 1/4 T Curry Powder
3/4 c Soy Sauce
1/2 T Black Pepper (fresh cracked)
1/2 c Rice Sherry Wine
1/2 ea Fresh Ginger Root
2 ea Large Garlic Cloves (minced)
10 ea Green Onions
Make shortribs into short, flat strips. Begin by placing rib fat-side-up on cutting board and cut 1/4" high layer almost (but not through) the bottom-most section of the rib. Turn meat over and continue to make 1/4" layers until the rib is completely layered and is now one long strip. Using the edge of a Chinese knife or otehr flat surface, pound meat until it is off an even thickness. NOTE: Chill the meat well. This cutting method will not work well on room temperature ribs. MARINADE: (Curry Based Blender Sauce) Blend all liquid ingredients in a blender for about 15 seconds at "Blend" speed. Grate the fresh ginger root and combine with the minced garlic. Mince the white (only) portion of the green onions. Add all ingredients to blender mixture and operate on "low" for about 45 seconds. Rub suace onto butterflied ribs and refridgerate for 2 or more hours. NOTE: This sauce is excellent for chicken, too. Place ribs on grill, basting often with sauce until done, about 30 minutes depending on heat of grill. Watch carefully to determine when done.

Marinade:

1/2 large white onion chopped
Marinade overnight
Grill to Medium rare
Garnish with sesame seeds and parsley
EASY Oven Baked Beef Short Ribs | The PERFECT Indoor BBQ Beef Ribs

I get it, some of you are skeptical. BBQ can't be done in the house... it has to be on a smoker, grill, or not at all! yeah I heard you. Trust me on this one, these BBQ beef ribs that I make in the oven are delicious and take VERY little prep!
I start off by wiping off the beef plate short ribs with a paper towel, then I score the back side (bone side) with a knife. This helps with the pull back as they cook. Then I use some olive oil as a binder and put a light shiny coat on all side. Now its time to season them. I like to use a salt and pepper based rub at a minimum or at least a starting point, and that EXACTLY what I did with my homemade rub:
2 TBSP Coarse Black Pepper
1 TBSP Salt
1 TBSP Lawry's Seasoned Salt. ( )
1 TBSP Granulated Garlic
1 tsp Granulated Onion
1 tsp Paprika
1.5 tsp Brown Sugar
But no worries if you aren't interested in making your own... here are a couple rubs that I suggest for Beef Ribs:
- Bearded Butchers Black ( )
- Bearded Butchers Brock Lesnar ( )
I season all side and place them in the preheated oven set at 300F.
Now this is the CRITICAL part! Beef ribs vary in thickness quite a bit, therefore the times will also vary. I set my timer to 2HR 15Min to start and at that point I begin checking for tenderness with a toothpick. I will continue to add more time to the timer until I get VERY little resistance with the toothpick. For me and these oven beef ribs, it took 3hr 15min for me to be happy with the tenderness.
Now I turned the oven to 425F and added sauce to my ribs. I used the Hey Grill Hey Everything BBQ Sauce ( ).
Once the oven was up to 425F I returned the beef short-ribs to the oven for 5-6 minutes to caramelize the sauce!
Remove the ribs from the oven and let them rest covered for 25-30min then enjoy!

Brown Sugar Chipotle Flanken Short Ribs Recipe
Flanken cut Beef Short Ribs are cross cut sections from the Short Primal. Here the short ribs are cut across the bone into thin strips about 3/8” to 1/2” thick. They perfect for marinating or seasoning and grilling up fast.
For this recipe I use Chipotle Pepper, Cayenne, and Smoked Paprika to give the ribs a spicy flavor and to balance out the heat I went with Brown Sugar. The sugar tones down the spice level and helps create a nice caramelization on the outer surface. You can find the recipe below.
Season each piece of short rib on all sides and pat in the rub. Let the meat hang out at room temperature while the grill comes up to temperature.
I fired up my Big Green Egg set up for direct grilling for this recipe but you can use any grill. Royal Oak Lump charcoal is used as a base and when the coals are hot, I add a few chunks of Pecan wood for flavor. Adjust the vents so the Egg runs around 350-400 degrees or medium high heat.
Place the flanken cut ribs on the cooking grate and cook until completely browned on all sides flipping each piece every 5-10 minutes.
You’ll know they’re done when they develop a beautiful, mahogany color on the outside. If some of the pieces start getting dark just move them around on the cooking grate.
This style of short rib is meant to be eaten well done. The fat renders and drips over the hot coals giving the meat a ton of flavor and the coals and pecan wood add the right amount of smoke.
If you love gnawing the last delicious morsels of meat off a good steak then you will go crazy over these Flanken Short Ribs.
Brown Sugar Chipotle Flanken Short Ribs Ingredients
- 3lbs Flanken Cut Beef Short Ribs (cross-cut)
- ½ Cup Brown Sugar
- 3 Tablespoons Salt
- 2 Tablespoons Black Pepper
- 1 Tablespoon Smoked Paprika
- 1 teaspoon Granulated Garlic
- 1 teaspoon Spanish Paprika
- 1 teaspoon Mustard Powder
- ½ teaspoon Chipotle Pepper
- ½ teaspoon Cayenne Pepper
Brown Sugar Chipotle Flanken Short Ribs Directions:
1. Combine dry ingredients in a small bowl, stir, and pour into a shaker or seasoning dredge.
2. Apply generous coat of dry rub mixture to all sides of Flanken cut Short Ribs and pat gently.
3. Prepare Big Green Egg for direct grilling at 350-400 degrees using Lump charcoal and pecan wood chunks for smoke flavor. Any type of grill can be used for this recipe.
4. Arrange short rib pieces on cooking grate and cook for 35-40 minutes turning often. Short Rib pieces should be well browned on all sides. Cook until the outside is caramelized moving around the cooking surface as needed.
5. Serve family style with your favorite sides and pickled items.
