Recipe in English:
Ingredients:
-Cooking oil ½ Cup
-Aloo (Potatoes) peeled & cubes 3 medium
-Phool gobhi (Cauliflower) florets 1 & ½ Cup
-Gajar (Carrots) 1 Cup
-Phaliyan (French beans) 1 Cup
-Shimla mirch (Capsicum) diced 1 Cup
-Mushrooms sliced ½ Cup
-Darchini (Cinnamon stick) 1
-Laung (Cloves) 3-4
-Zeera (Cumin seeds) ½ tsp
-Hari elaichi (Green cardamom) 3-4
-Tez paat (Bay leaves) 2
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Tamatar (Tomatoes) chopped 2 medium
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Chaat masala ½ tsp
-Pyaz (Onion) fried 1 Cup
-Dahi (Yogurt) whisked 1 Cup
-Elaichi powder (Cardamom powder) ½ tsp
-Garam masala powder ½ tsp
-Lemon juice 3 tbs
-Hari mirch (Green chillies) slit 4-5
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Boiling water as required
-Namak (Salt) 1 tbs or to taste
-Darchini (Cinnamon stick) 1
-Hari elaichi (Green cardamom) 3
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 2-3
-Sabut kali mirch (Black peppercorns) 8-10
-Tez paat (Bay leaf) 1
-Chawal (Rice) sella 500g (soaked for 1 hour)
-Zarda ka rang (Orange food colour) ¼ tsp
-Doodh (Milk) 3-4 tbs
-Elaichi powder (Cardamom powder) ½ tsp
-Garam masala powder ½ tsp
-Pyaz (Onion) fried 3
-Ghee (Clarified butter) 2 tbs
-Har dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
Directions:
-In a wok,add cooking oil,potatoes & fry on medium flame for 2-3 minutes then take out in a bowl & set aside.
-In the same wok,add cauliflower & fry on medium flame for 1-2 minutes,take out in the same bowl & set aside.
-Add carrots,fry on medium flame for 1-2 minutes,take out in the same bowl & set aside.
-Add french beans,fry on medium flame for 1-2 minutes then take out in the same bowl & set aside.
-Add capsicum,mushrooms & fry on medium flame for 1-2 minutes then take out in the same bowl & set aside.
-In a wok,add cinnamon stick,cloves,cumin seeds,green cardamom,bay leaves & mix well.
-Add ginger garlic paste & mix well.
-Add tomatoes,mix well & cook until tomatoes are soft (2-3 minutes).
-Add salt,red chilli powder,turmeric powder,chaat masala,mix well & cook for 1-2 minutes.
-Add fried vegetables & mix well.
-Add fried onion (crush with the help of hand) & mix well.
-Turn off the flame,add yogurt,cardamom powder,garam masala powder,lemon juice & mix well.
-Add green chillies,fresh coriander,mint leaves & mix well.Vegetable korma is ready!
-In boiling water,add salt,cinnamon stick,green cardamom,black cardamom,cloves,black peppercorns,bay leaf & mix well.
-Add soaked rice,mix well & boil until ¾th done & strain.
-In a pot,add boiled rice,vegetable korma & remaining boiled rice.
-In mik,add orange food color & whisk well.
-Now add dissolved food color,garam masala powder,cardamom powder,fried onion,clarified butter,fresh coriander, mint leaves,cover & steam cook on medium flame for 2-3 minutes to build up steam then steam cook on low flame for 10-12 minutes.
-Mix well & serve!

Ingredients :
Ghee - 3 tsp
Oil - 1 tbsp
Cooked Basmati Rice
Saffron Water
Fried Onions
Biryani Masala
Coriander Leaves
Mint Leaves
To Marinate The Vegetables:
Curd - 1/2 cup
Turmeric Powder - 1/4 tsp
Chili Powder - 2 tsp
Coriander Powder - 1 tsp
Biryani Masala - 1 tbsp
Salt - 1 tsp
Ginger Garlic Paste - 1 tsp
Onion - 2 nos. (sliced)
Green Chili - 1 no. (chopped)
Tomato - 2 nos. (chopped)
Carrot - 1 no. (chopped)
Beans - a few (chopped)
Potato - 1 no. (chopped)
Cauliflower Florets - 1 cup (chopped)
Green Peas - 1/4 Cup
Fried Onions - a few
Coriander Leaves - a handful
Mint Leaves - a handful
Methods:
To a bowl, add curd, salt, ginger garlic paste and spice powders required for the marinade mix well
Add the vegetables to this curd mixture and mix well
Let it marinate for 20 mins
Meanwhile, soak the rice for 20 mins
Cook the rice till it is 3/4th done and strain it and keep it aside
Heat a pan with ghee and oil
Add the marinated vegetables and saute for 5 mins
Now close and cook for 15 mins on medium flame
Cook till the moisture is completely gone
Take half of the vegetable masala and keep it aside
Layer the cooked rice on one layer of vegetable masala
Add the remaining vegetable masala and another layer of rice on it
Finally add fried onions, coriander leaves, mint leaves, biryani masala powder, and saffron water
Close the pot and leave it in dum for 15 mins on low flame
Now turn off the stove and let the biryani rest for about 15 mins
Serve the Veg Dum Biryani hot with some raita by the side

VEG DUM BIRYANI RECIPE:

Ingredients
Vegetable Marinate
2 Winter Carrots, Cubed
1 Small Cauliflower, florets
15-16 French beans, Cubed
½ cup Fresh Green Peas
1 cup Curd
2 tbsp Ginger Garlic Paste
1 tbsp Ghee
½ tsp Turmeric Powder
½ tsp Red Chilli Powder
½ tsp Coriander powder
¼ tsp Shahi jeera
A pinch of Saffron
½ tsp Javitri Elaichi Powder
3-4 Mint leaves
Salt To Taste
¼ cup Fried Onion
For Biryani
1 tbsp Ghee
¼ cup Oil
3 Medium Onion, Sliced
1 Javitri
2 Cloves
½ tsp Shahi jeera
¼ cup Water
For Rice Cooking
Water
3 Bay leaf
1 Big Cardamom
1 Javitri
2 Clove
3-4 Black Peppercorns
Salt to Taste
2 cup Basmati Rice
For Jhol
A pinch of Saffron
2 Green Chillies , slit
1 tbsp Ghee
1 cup Milk
1 tbsp Onion Flavored Oil
1 tbsp Kewra water
½ tbsp Rose water
Few Mint Leaves
Few Fried Onion
For Burani Raita
1 ½ cups Curd
1 tbsp Garlic
Salt to taste
Charcoal for smoking
Process
For Marinade
● In a mixing bowl, add winter carrots, cauliflower florets, French beans, fresh green peas mix well.
● Add curd, ginger garlic paste, ghee, turmeric powder, red chilli powder, coriander powder, shahi jeera, a pinch of saffron, javitri elaichi powder, mint leaves, salt to taste, fried onion and mix well and keep it aside.
For Cooking of Rice
● In a large saucepot, add water for boiling, add bay leaf, big cardamom, javitri, clove, black peppercorns, salt to taste let the water boil.
● After boiling water, add the soaked basmati rice and let it cook.
● Strain the excess water and set aside.
For Biryani
● In a large saucepot, add ghee, oil, onion and saute till translucent and brown in color. And keep it aside.
● In the same saucepot, add remaining ghee, javitri, cloves, shahi jeera let it splutter.
● Add the marinated mixture into the saucepot and mix well and let it cook for 10 minutes.
For Jhol
● In a pan, add saffron, green chilli, ghee saute well.
● Add milk, onion flavored oil, kewra water, rose water and mix well.
For Layering
● In the same saucepot firstly, Arrange a layer of rice at the bottom. Over that arrange half the cooked vegetables followed by another layer of rice.
● Pour the milk mixture all around the rice. Few mint leaves and fried onion.
● Arrange the remaining vegetables followed by the remaining rice. Sprinkle the remaining milk mixture and few mint leaves and fried onion.
● Cover and seal it with dough and cook for 20 minutes. Serve hot with raita.
For Burani Raita
● In a bowl, add curd, garlic, salt to taste and mix well.
● Smoke it with charcoal and clove.
