Who doesn't like Biryani, especially when you can make it from the comfort of your home! Today's recipe is a quick Vegetable Dum Biryani. Enjoy and share it with someone who needs to try this at home!

INGREDIENTS -
FOR MARINATION
1½ cups diced carrot
1½ cups Beans (1” long)
2cups Cauliflower florets
¾ tsp Turmeric
2tsp Chilli powder
2nos Cinnamon stick
5 nos Cardamom
2 tsp Shahi jeera
1 tbsp Garlic paste
1 tbsp Ginger paste
½ tsp Mace
½ tsp Cardamom powder
2 nos Green chillies
1 cup Mint leaves
1½ cup Curd
2cups Onion sliced
1cup Oil
to taste Salt
FOR RICE
3 cups Rice basmati Boiled
3 lts Water
4-5 nos Cardamom
2 nos Cinnamon stick
2 tbsp Salt
1 no Green chillies
1 tbsp Oil
1 tbsp Rose water
½ tbsp (approx) Kewra water
(dissolved in 2tbsp milk) – a pinch Saffron
handful Mint leaves
1 cup Green Peas
handful Fried onions
Leftover oil – 3 tbsp
Dough - for sealing
Water from Blanched Rice - 1 cup

Vegetable Biryani
Ingredients
Basmati rice – 1cup
Carrot, beans, potato – each ½ cup
Peas – 1 cup
Oil – 3 tbl spoon
Ghee – 1 tbl spoon
Cinnamon stick – 1
Star anise – 1
Cloves – 2
Cardamom – 2
Bay leaf
Onion – 1
Green chilli – 1
Ginger garlic paste – 1 tbl spoon
Tomato – 1
Mint leaves
Chilli powder – 1 teaspoon
Coriander powder – 1 teaspoon
Garam masala – ½ teaspoon
Turmerci powder – ¼ teaspoon
Salt
Curd – 3 tbl spoon

Ingredients:
-Cooking oil ½ Cup
-Aloo (Potatoes) peeled & cubes 3 medium
-Phool gobhi (Cauliflower) florets 1 & ½ Cup
-Gajar (Carrots) 1 Cup
-Phaliyan (French beans) 1 Cup
-Shimla mirch (Capsicum) diced 1 Cup
-Mushrooms sliced ½ Cup
-Darchini (Cinnamon stick) 1
-Laung (Cloves) 3-4
-Zeera (Cumin seeds) ½ tsp
-Hari elaichi (Green cardamom) 3-4
-Tez paat (Bay leaves) 2
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Tamatar (Tomatoes) chopped 2 medium
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Chaat masala ½ tsp
-Pyaz (Onion) fried 1 Cup
-Dahi (Yogurt) whisked 1 Cup
-Elaichi powder (Cardamom powder) ½ tsp
-Garam masala powder ½ tsp
-Lemon juice 3 tbs
-Hari mirch (Green chillies) slit 4-5
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Boiling water as required
-Namak (Salt) 1 tbs or to taste
-Darchini (Cinnamon stick) 1
-Hari elaichi (Green cardamom) 3
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 2-3
-Sabut kali mirch (Black peppercorns) 8-10
-Tez paat (Bay leaf) 1
-Chawal (Rice) sella 500g (soaked for 1 hour)
-Zarda ka rang (Orange food colour) ¼ tsp
-Doodh (Milk) 3-4 tbs
-Elaichi powder (Cardamom powder) ½ tsp
-Garam masala powder ½ tsp
-Pyaz (Onion) fried 3
-Ghee (Clarified butter) 2 tbs
-Har dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
Directions:
-In a wok,add cooking oil,potatoes & fry on medium flame for 2-3 minutes then take out in a bowl & set aside.
-In the same wok,add cauliflower & fry on medium flame for 1-2 minutes,take out in the same bowl & set aside.
-Add carrots,fry on medium flame for 1-2 minutes,take out in the same bowl & set aside.
-Add french beans,fry on medium flame for 1-2 minutes then take out in the same bowl & set aside.
-Add capsicum,mushrooms & fry on medium flame for 1-2 minutes then take out in the same bowl & set aside.
-In a wok,add cinnamon stick,cloves,cumin seeds,green cardamom,bay leaves & mix well.
-Add ginger garlic paste & mix well.
-Add tomatoes,mix well & cook until tomatoes are soft (2-3 minutes).
-Add salt,red chilli powder,turmeric powder,chaat masala,mix well & cook for 1-2 minutes.
-Add fried vegetables & mix well.
-Add fried onion (crush with the help of hand) & mix well.
-Turn off the flame,add yogurt,cardamom powder,garam masala powder,lemon juice & mix well.
-Add green chillies,fresh coriander,mint leaves & mix well.Vegetable korma is ready!
-In boiling water,add salt,cinnamon stick,green cardamom,black cardamom,cloves,black peppercorns,bay leaf & mix well.
-Add soaked rice,mix well & boil until ¾th done & strain.
-In a pot,add boiled rice,vegetable korma & remaining boiled rice.
-In mik,add orange food color & whisk well.
-Now add dissolved food color,garam masala powder,cardamom powder,fried onion,clarified butter,fresh coriander, mint leaves,cover & steam cook on medium flame for 2-3 minutes to build up steam then steam cook on low flame for 10-12 minutes.
-Mix well & serve!

How to make Easy Vegetable Biryani
Garlic- 1 Whole ( 8 - 12 Flakes )
ginger- 1 Big ( Small Pieces )
Big onion- 3 nos ( Half Sliced )
green chillies- 4 nos
Refined oil- 1/2 Cup
Cashew nuts- 25 gms
Caraway Seeds( Shahjeera) - 1/2 tsp + 1 tsp
Cinnamon- 1 ( Small Pieces) + 1 (Small Piece)
Cloves- 3 - 4 nos + 2 - 3 nos
Cardamon- 4 nos + 2 - 3 nos
Salt ( according to taste )
Beans- 7 - 8 nos
Carrot- 1 Big
Potato- 1 Big
TOMATO - 3 nos
Turmeric powder- 1/2 - 3/4 tsp
Kashmiri chilli powder- 1 tbs
Coriander powder- 1 tbs
Garam Masala powder - 1/2 - 3/4 tsp
Curd- 1/2 Cup
Cauliflower - 10 (Small Pieces)
Green peas- 1/2 Cup
Mint Leaves
Coriander leaves
Water- 11/2 - 2 Cups
Pepper Seeds- 1/2 tsp
BASMATI RICE- 3 Cups
Lemon juice- 1 tbs
Cashew nuts- 25 gms
