Root Vegetable Latkes with Vermont Creamery Sour Cream

Root Vegetable Latkes
Serves 4-6, makes 12 2” latkes
Ingredients:
1 cup peeled and grated parsnips
1 cup peeled and grated sweet potato
1 large shallot, peeled and minced
3 tbsp fresh parsley finely chopped + extra for garnish
1/3 c chickpea Flour
1/2 tsp garlic powder
1 large egg, lightly beaten
1/4 tsp sea salt
1/2 tsp pepper
1 -2 tablespoons of coconut oil flaky sea salt for garnish
1. Place a mesh strainer over a medium sized bowl. Line with a dish towel, and add the shredded parsnips and sweet potato. Gather the sides of the dish towel together, keeping the contents in the middle and squeeze until liquid seeps into the bowl.
2. Drain the liquid from the bowl, add the shredded vegetables, shallot, parsley, flour, egg, garlic powder, salt and pepper. Gently mix until well combined, and set aside.
3. Grab 4 full sized paper towels and lay them in a stack on a cutting board.
4. Heat the oil in a heavy bottomed pan over medium heat until the oil is sizzling. Using a 1/4 measuring cup or cookie scoop, take a scoop of the vegetable mixture, and place in the pan. The fritter should be about 2” in diameter.
5. Cook a few fritters at a time, leaving space in between for room to flip.
6. Cook them for about 2-3 minutes, until brown and crispy on each side, and flip.
7. Transfer them to the paper towel lined cutting board to absorb any excess oil and give them a kiss of flaky sea salt.
8. Once cooled, carefully transfer the latkes to a serving dish. Using a small spoon, garnish them with a dollop of sour cream and finish off with some fresh parsley
