LAY HO MA (how's it going in Cantonese)! This velvety, savoury recipe is earthy, comforting, and sure to please any gravy lover. Join me in this episode and learn how to make the most amazing mushroom gravy recipe right at home!
Ingredients:
2 pieces garlic
1/2 onion
1 tbsp + splash avocado oil
pepper to taste
1-2 small pre-boiled potatoes
7g dried mushrooms
1/2 cup red wine
1/4 tsp cayenne pepper
1/4 tsp cumin
1 tsp smoked paprika
1 tbsp soy sauce
1/2 tbsp dark soy sauce
1 cup veggie stock
1/2lb shiitake mushrooms
pinch of salt
Directions:
1. Roughly chop the garlic and slice the onion
2. Heat up a sauté pan to medium heat. Add 1 tbsp avocado oil followed by the onions, garlic, and pepper to taste. Sauté for about 5-6min
3. Add 1-2 small pre-boiled potatoes and dried mushrooms. Add the red wine, deglaze, and simmer for about 1min. Then, add the cayenne pepper, cumin, smoked paprika, soy sauce, dark soy sauce, and veggie stock. Stir and cook for 5-6min
4. Transfer the mixture to a blender and blend on high until completely liquified. You can adjust the thickness of the gravy to your personal preference by adding a little more veggie stock or potato
5. Slice the shiitake mushrooms
6. Heat up a nonstick pan to medium heat. Dry sauté the mushrooms for 4-5min. Add a pinch of salt and fresh cracked pepper to taste
7. Add a splash of avocado oil and sauté for another couple of minutes
8. Heat up the gravy with the mushrooms in the sauté pan

Beans Masala Gravy Recipe:
Beans - 250 g
For the Masala:
Peanuts - 3 tbsp
White Sesame Seeds - 1 tbsp
Green Cardamom - 2 nos
Black Peppercorn - 1 tsp
Clove - 2 nos
Cinnamon - 1 inch
Curd - 3 tbsp
Coriander Stems - 2 tbsp
Other Ingredients:
Oil - 1 tbsp + 1 tbsp
Cumin - ½ tsp
Garlic (finely chopped) - 1 tbsp
Green Chilli (finely chopped) - 1 no
Onion (finely chopped) - 1 no
Ginger Garlic Paste - 1 tbsp
Tomato (finely chopped) - 2 nos
Salt - 1 tsp
Turmeric Powder - ¼ tsp
Coriander Powder - 1 tsp
Red Chilli Powder - ½ tsp
Water - ¾ Cup
Garam Masala Powder - ¼ tsp
Coriander Leaves (finely chopped) - 2 tbsp
Cooking Instructions:
1. To prep the beans, cut the ends off first. If the beans are older/dry, you can peel off the fibers from the ends too. Then hold a few beans in a bunch and chop them to around 1-inch length.
2. In a pan, add peanuts and saute on low heat for 2-3 minutes.
3. Then add the white sesame seeds, green cardamom, black peppercorn, clove and cinnamon. Continue to cook for 3 minutes on low heat, until everything is crisp and aromatic.
4. Grind it into a powder.
5. Add curd and coriander stems, and grind to form a paste. Set this aside.
6. In a pan, heat oil and add the beans. Fry on high heat for 2-3 minutes, then remove the beans and set aside.
7. Add oil to the same pan and add cumin seeds, garlic and green chilli. Saute until the garlic turns light golden brown.
8. Add the onion and saute until it turns golden brown.
9. Add ginger garlic paste, tomato, salt and all the masala powders. Saute until the tomato starts to soften, 3-4 minutes.
10. Add the prepared masala paste, mix well and cook for 3 minutes.
11. Add the beans and mix well. Add water, cover and cook on low heat for 5 minutes, or until the beans are cooked to your liking.
12. Add garam masala powder and coriander leaves. Stir and turn off the heat.

There’s nothing nicer when lashings of rich, tasty gravy are poured over your Christmas dinner and River Cottage has a vegan recipe full of hearty flavour.

VEGAN HOLIDAY GRAVY RECIPE - Perfect for THANKSGIVING
This is the old family method for making a wonderful vegan gravy. It reminds me of wonderful Holiday meals, and signals the promise of another happy Holiday gathering. Gravy is not usually one of the recipes that receives a lot of excited attention, but without it, the meal is not complete. We are very excited about this gravy. Hope you enjoy this recipe.
