Arroz con Pollo Verde (Peruvian Green Rice & Chicken)
This is a dish my grandmother use to make. It reminds me of my childhood and having my grandparents around to spoil me. ????
Ingredients
Chicken, I used 4 bone-in, skin-on thighs & 4 drumsticks
1 1/2 heads of garlic, roughly chopped
4 cups of rice
4 bunches of cilantro*
1/2 bunch of parsley*
*blended in part of the 8 cups of water used to make the rice
1/2 tsp salt for the chicken
1 1/2 tsp salt for the rice
1 cup frozen green peas
Vegetable oil for cooking the chicken
Note: This recipe can easily be cut in half if needed. Instead of the 4 cups of rice and 4 bunches of cilantro, 2 can be used for each. If reducing the recipe, I would cut everything down to 1/2 by adding 1/4 cup of parsley, 1/2 cup of green peas adjusting the salt based on your preference.

1 - 2 cups water (2 cups liquid total when combined with green mixture)
2 tsp chicken knorr (more or less)
2 poblano peppers
1 jalapeño
1/4 onion
1 garlic
small handful cilantro
8.75 oz can whole kernel corn
salt taste

Green Rice (Arroz Verde)
Green rice is full of flavor and is the perfect side dish recipe for dinner tonight. It's light, refreshing, and ready in just 45 minutes! Perfect with Mexican or any main dish.

Ingredients
1 cup long grain white rice
2 poblano chiles, stem and seeds removed (optional)
1 jalapeño, stem and seeds removed (optional)
2 garlic cloves
1 small onion, cut in half
1/2 tsp kosher salt
2 cups chicken stock
3 tbsp vegetable oil
1/4 cup cilantro, chopped fine
Instructions
a medium sized bowl add the rice and cover with boiling water. Allow to soak for 15 minutes. Drain, rinse with cold water, shake off excess water and set aide.
Dry roast the poblanos, jalapeño and onion in a hot skillet until they start to blister and char slightly. Add to a blender along with the garlic, salt and chicken stock. Puree until smooth.
Add the oil to a medium saucepan over medium heat and cook the rice for 2 minutes or so, stirring to coat, until golden in color. Add the chile puree. Bring to a boil, cover and reduce to simmer for 20 minutes.
Remove from heat, add cilantro and fluff with fork. Cover again and let rest 10 minutes. Season to taste before serving.

Tip!!!! Make sure you use only 1 cup 1/2 of broth /salsa you can throw in the whole 1 cup of water or chicken broth to blender so you don’t get confused, this is important so that your rice absorb all the liquid and dont come out mushy????
Ingredients:
2 lbs chicken I used drumsticks and thigh
1 cup white rice
1 cup water or chicken broth
3 tbsp oil
4 chile poblanos
1 Tomatillolo
3/4 cup corn
1/2 white onion
1 serrano
1 garlic clove
Handful of cilantro
Salt I used 1 1/2 tsp (keep in mind you also add seasonig/salt to the chicken, you can wait to add salt after adding the sauce) ????
1/2 tsp ground cumin
1/2 tsp oregano
1/2 tsp chile flakes(optional)
