CLASSIC WALDORF SALAD
1-2 apples, red-skinned, sweet & crunchy
1/2 cup celery, thinly sliced
1/2 cup grapes, sliced in half (substitute w/ 1/4 cup raisins)
1/2 cup walnuts, slightly toasted (substitute w/ pecans or almonds)
3 tablespoons mayonnaise (substitute w/ yogurt or sour cream)
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt & fresh cracked black pepper
Fresh Lettuce
In a large mixing bowl add diced apples and toss with fresh lemon juice. Add celery, grapes, salt and pepper. Toss until well combine. Add mayonnaise. Toss until apple mixture is coated well.
Add nuts (right before serving) to WALDORF SALAD, toss well, and serve on a bed of lettuce.
Serves 4
TIPS: Store salad in airtight container in refrigerator up to 1 day.

Classic Waldorf Salad
Crunchy apples and celery, juicy grapes, and rich walnuts come together to form this classic Waldorf salad. It’s comforting, easy to make, and oh-so refreshing – no wonder it’s been such a popular salad for over 100 years!

✅Ingredients
• 2 cups granny smith apples diced, about 2 apples
• 1 tablespoon lemon juice
• 1/4 cup granulated sugar
• 1 cup red grapes halved
• 1 cup celery diced
• 1/2 cup walnuts chopped and toasted
• 1/2 cup greek yogurt
• 1/4 cup mayonnaise
• 1/2 teaspoon salt
✅Instructions
1️⃣ Dice apples into bite size pieces, about 1/2 cubes. Place in a large bowl, drizzle lemon juice, and sprinkle sugar over the apples. Toss to make sure all is coated.
2️⃣ Halve grapes and add to the apples. Dice celery and add to the bowl along with walnuts.
3️⃣ In a small mixing bowl add greek yogurt, mayonnaise, and salt. Mix until well combined.
4️⃣ Pour the sauce over chopped ingredients and toss to coat thoroughly.

Our CHICKEN WALDORF SALAD is an awesome creation, and here’s why:
WALDORF WORKS
Much of the beauty of this legendary salad is about the unexpected collection of ingredients used to create it. Sure, it has moist and tender chicken, but how about the fresh fruit component? We love the use of red grapes and Granny Smith apples to create a tangy sweetness you’ll enjoy with every bite.
The salad also has a nice bit of crunch from raw celery, plus nuttiness from the chopped walnuts. One suggestion on the nuts is to make sure they’re freshly shelled; they taste almost buttery when they are.
MIX IT UP
Once all of the ingredients are prepared and assembled in your mixing bowl, we like to add something unexpected: freshly chopped mint. This gives the salad an extra note of brightness and keeps the salad very refreshing.
We also like to amp up the flavour of the mayonnaise with a hit of Dijon and lemon juice. This adds a zesty tang to the mix. Expect a really fresh taste from this beautiful salad.
SERVICE PLEASE
I can just imagine how this salad was presented back in the day – white-gloved servers passing chilled plates of CHICKEN WALDORF SALAD out to New York’s finest. For us, let’s simplify things, shall we? Present the salad with a simple garnish of fresh black pepper, a sprinkle of mint and a few more chopped walnuts.
One last point on service is for all of the vegetarians out there. You can still enjoy this delicious salad without the chicken, replacing it with chopped, roasted cauliflower. We bet you’ll love it.
This recipe is especially perfect after you make the ROAST CHICKEN recipe I posted a few weeks back. This CHICKEN WALDORF SALAD will allow you to use up the leftovers and enjoy a healthy lunch in no time. If you’d like to serve soup before this salad, try our CREAM OF ASPARAGUS or simple CORN CHOWDER recipes – both will pair perfectly with this.

This celebrated CHICKEN WALDORF SALAD has earned a reputation as a classic recipe, and rightly so – a classic always tastes this good!
INGREDIENTS
For the dressing:
½ cup of mayonnaise
1 tablespoon of Dijon mustard
juice of half a lemon
For the salad:
5 ribs of celery, chopped
2 cups of red grapes, quartered
2 Granny Smith apples, cored and chopped
2 cups of roast chicken, chilled and cubed
1 tablespoon of fresh mint, finely chopped
1 cup of walnuts, rough-chopped or broken by hand
salt and pepper to taste
Instructions
Combine mayonnaise, Dijon mustard and lemon juice in a small bowl and whisk together. Set aside.
Place prepared celery, grapes, apple, chicken and mint in a medium-sized bowl. Add dressing and toss. Add salt and pepper to taste.
Transfer portions to plates and sprinkle with walnuts. Serve immediately.
