1 c Pearl Barley; 2 c Water 1 c Celery; 1/2 c Walnut; chopped OR -mixed almonds and hazelnuts Salt and pepper to taste 2 tb Minced fresh parsley; Rinse barley under warm running water. Let drain. In a medium-size saucepan, bring to a boil and gradually add barley. Cover and cook 20 to 25 minutes, Return barley to saucepan with celery, nut, salt and pepper; heat through. Garnish with parsley. HOW TO MAKE KOLYVA 'Traditional wheat-berry and walnuts DESSERT'
➳Recipe Ingredients: 500g whole wheat grains 1/2 tsp salt 1,5l water 500g chopped walnuts 50g ground biscuits 100g raisins 50ml rum essence 200g sugar the zest of 1 lemon chocolate bonbons
Ingredients: Anchovies in olive oil Black pepper Cold cooked barley Cold cooked broccoli Extra virgin olive oil Garlic Hot fresh pepper Lemon zest Paprika Shallot Walnuts White wine
Preparation: At very low heat dissolve the anchovies in a little bit of extra virgin olive oil then add the chopped shallot, garlic and fresh hot pepper. Pour some white wine. When the wine has evaporated add the cold cooked barley. Mix it well at high heat.
Add the cold cooked broccoli florets.
Season to taste with black pepper and paprika then add the chopped walnuts. Turn off the heat and add the lemon zest.
