How To make White Russian Truffles
1 3/4 lb Milk chocolate, divided
1 c Whipping cream
1/4 c Kahlua
1. Chop finely 1 lb of the chocolate. Melt in a double boiler to 120
degrees. Measure the cream into a 3-quart saucepan and bring just to the boil. Remove from the heat and cool to 120 degrees. Add the chocolate to the cooled cream and stir until the mixture is smooth. 2. Stir the Kahlua into the chocolate, mixing well. scrape onto a baking
sheet and refrigerate until firm. 3. Finely grate the remaining 3/4 lb of the chocolate. (This is easiest
to do using the grater blade of a food processor.) Remove the filling from refrigeration and form into small rough balls. Place on a baking sheet lined with wax paper. 4. Roll the truffles in the grated chocolate, pressing gently to adhere.
5. Refrigerate overnight. Remove from refrigeration 15 minutes before
serving. Note: these truffles do not hold well at room temperature.

What's up guys, today where playing with one of the bartender's favourite and I said the Negroni cocktail.
The negroni is usually made with gin but there is a version out there that I love called the Kingston Negroni and it's using Jamaican rum instead of gin.
Today we are taking the Knigston Negroni to another level and we will give it a chocolate flavour with a hint of heat!
Ingredients
1 oz Appleton Estate rum
0.75 oz White chocolate infused Campari (look the video to know how to make it)
0.5 oz Sweet Vermouth
0.25 oz Ancho Reyes Chile liqueur
Orange Zest
Method
In a mixing glass filled with ice, stir all ingredients (except for the orange zest)
Strain it over ice in a rocks glass and express the orange zest over it before serving

White Chocolate and Coconut Truffles are smooth, flavorful, delicious and easy to make at home. It is a perfect elegant dessert for a dinner in two, for holiday tables or friend gatherings and also can be a wonderful homemade gift idea. Everybody will love these, there is no doubt about that.

Ingredients
Makes about 20 truffles
1/4 cup (60ml) whipping cream (35%fat)
7 oz (200g) white chocolate, good quality, broken into chuncks
1 tbsp (14g) butter
1/2 tsp vanilla extract, optional
1/3 cup (33g) unsweetened coconut flakes
zest from an orange, optional
20 hazelnuts, toasted or not
1/3 cup (33g) unsweetened coconut flakes for rolling
1. Melt chocolate with cream in a bain marie over low heat. Stir continuously until the chocolate is almost melted. Add butter and continue stirring until smooth. Remove from heat. Add vanilla extract and orange zest if using.
2. Stir in coconut flakes, let it cool, cover and refrigerate for a couple of hours until the mixture gets firm enough to roll it into balls.
3. Using a teaspoon roll the mixture into small balls adding a hazelnut inside. Roll each ball into coconut flakes. Serve or refrigerate until ready to serve. They keep well refrigerated in an airtight container for up to 2 weeks.
