Who said waffles can't be healthy? Our vegan waffles are super delicious, crisp on the outside yet light and fluffy on the inside, a perfect part of your weekend (or everyday) breakfast!
Yield: 4 waffles (½ cup batter each)
Ingredients:
Dry:
120 g | 1 cup whole wheat flour
12 g | 1½ Tbsp cornstarch
12 g | 1 Tbsp sugar, add more as desired
½ Tbsp baking powder
⅛ tsp baking soda
¼ tsp salt
Wet:
240 ml | 1 cup unsweetened non-dairy milk, room temperature (we used cashew milk)
½ Tbsp apple cider vinegar or lemon juice
2 Tbsp neutral-tasting oil
1 tsp vanilla extract

Homemade Whole Wheat Waffles From Scratch (Quick & Easy)
BELGIAN WAFFLES
2 cups flour
1⁄2 tsp. salt
1 tsp. baking soda
1⁄2 tsp. baking powder
2 T. sugar
4 egg yolks, separated out
2 cups buttermilk
3 T. oil
Pinch of cream of tartar
Combine flour, salt, baking soda, baking powder and sugar in a mixing bowl. Separate the eggs. Beat the egg yolks and add to flour mixture. Add buttermilk and oil and stir. Do not overmix (there should be some lumps in the batter). Whip the egg whites with cream of tartar until soft peaks form. Gently fold in egg whites into the batter. Cook on hot Belgian waffle iron, sprayed with Pam Spray. Serve 8.
