Chicken chasseur (Frenchy chicken stew with tomatoes and butter)

***RECIPE, SERVES 4-6***
About 4 lb (1 kilo) bone-in, skin-on chicken pieces (or break down a whole chicken)
1 lb (454g) fresh button mushrooms
1-2 shallots
1-2 carrots
1 14 oz (114mL) can of tomatoes (crushed, diced, pureed, etc)
flour
chicken stock
soy sauce (not traditional but good)
brandy (I used cognac)
white wine (traditional to use a little but I just used extra cognac)
oil
butter
fresh herbs for garnish (I like tarragon)
salt
pepper
1 package of egg noodles, cooked per instructions and tossed with a little butter
Cut the mushrooms and carrot and get them sauteing in a little fat. Dice the shallot and add it to the pan once the mushrooms and carrot look almost done.
Meanwhile, season the chicken pieces heavily with salt and pepper and dust lightly with the flour. When the veg is soft, remove it or push it to the side so you can brown the chicken pieces.
When the chicken is golden brown, deglaze the pan with brandy, add the vegetables back if necessary, stir in the tomatoes, a little white wine if you're using it, and enough stock to cover everything. Simmer until the chicken is as tender as you want it — I gave mine an hour.
When the chicken is done, take the pieces out and boil the sauce down until thick. Taste and adjust seasoning — I really like a dash of soy sauce, assuming the sauce can handle the salt. Return the chicken to the pan to coat and reheat, garnish with fresh herbs and serve with noodles.

Here is the full recipe for about 8 portions:
Ingredients:
- 1/2 of cabbage (approx. 1kg);
- 1kg of sauerkraut;
- 1,5kg of meat (I used 600g of beef, 600g of turkey and 300g of pork tenderloin);
- 100g of bacon (you can skip or replace with different meat, if you don't want to too fatty dish);
- 200g of sausages (you can skip or replace with different meat, if you don't want too fatty dish);
- 2 tablespoons of butter (20g), in keto version - add more butter (60g);
- 2 onions (250g);
- 150g of mushrooms;
- 100g of tomato puree;
- 100ml of dry wine (optional);
- salt, pepper, caraway seed, marjoram, chilli, ground coriander - to taste;
- a few bay leaves and a couple of allspice berries.
1. Start with cabbage: cut in half, set aside one half and chop the other (cut into small strips), then put it in a large pot.
2. Pour in about two glasses of water and start to cook over low heat.
3. Now sauerkraut: rinse so that it is not too sour, squeeze out excess juice, chop (doesn't have to be fine) and add to the boiling cabbage.
4. Now the meat: dice it, add 1-2 tablespoons of butter to a hot pan, then sear the meat - beef first.
5. Add to the pot (in the keto version - along with the fat on which the meat was seared).
6. Then pork and poultry (sear with another 1-2 tablespoons of butter), also put into a pot (in the keto version - along with the fat on which the meat was seared).
7. Then bacon and sausage: cut into smaller pieces and add to the pot, mix thoroughly.
8. Peel two onions, dice them and set aside.
9. Now the mushrooms - defrost them and rinse well (when using dried mushrooms you have to souse them beforehand), cut into pieces and add to the onion.
10. Add the butter to a hot pan, then add the mushrooms and onions, fry a few minutes and put into the pot.
11. Add a few bay leaves and a couple of allspice berries, mix well, cover with a lid and cook for about 2-3 hours, so that the beef is soft (if you like overcooked cabbage, cook even longer).
12. At the end of cooking, add spices, red wine (optional) and tomato puree, mix thoroughly and cook covered for 10-15 minutes.
Tips:
1. After you put the cabbage and pour water into the pot, cook it constantly over low heat, puting in the meantime the consecutive ingredients.
2. If the water boils away, add more, so as not to burn the hunter's stew.
3. The more different meat you add the better taste of bigos.
4. The best hunter's stew is on the next or following days reheated, kept during this time in the fridge.
