Gobhi Achar recipe,, Cauliflower pickle, Cauliflower avakaya, prepared mostly during winters.
Ingredients
Cauliflower – 1 (750 grams)
Salt – 2 tsp
Mustard oil – ½ cup (100 grams)
White vinegar – 2 tbsp
Salt – 2 tsp
Mustard powder – 2 tsp (coarsely ground)
Fennel seeds – 2 tsp (coarsely ground)
Asafoetida – 1 pinch
Turmeric powder – 1 tsp
Red chili powder – 1 tsp
Fenugreek powder – 1 tsp (coarsely ground)

Hi everyone!
Aloo ko achar is one of the most popular side dishes in Nepal. Alu ko achar goes well with roti, pulao or any other dishes therefor it is popular during marriages and party. Aalu ko Achar is one of my favorite dishes. This potato salad is a bit spicy, sour and tangy in taste. It is very easy to make.

4 Medium sized potatoes
1 large cucumber
1 large carrot
1 cup green peas
1 red onion
4-5 green chili
4 dry red chili
a handful coriander leaves
1 teaspoon cumin seeds
1 teaspoon fenugreek seeds
3 table spoon sesame seeds
1 table spoon mustard oil
1/2 tea spoon turmeric powder
2 teaspoon salt
juice from 1 lime

Cumin seeds -1 tbsp
Black peppers -1/2 tbsp
Fenugreek seeds -1/2 tbsp (optional)
Turmeric powder - 3/4 tbsp
Red chilli powder - 2 tbsp
Dry mango powder -1 tbsp
Carom seeds (ajwain)- 1 tsp
Salt to taste
Vinegar - 1.5 tbsp
Mustard oil -1 cup

Ingredients for Green Peas Pickle - मटर का अचार
Peas - मटर - a little more than 2 Cup
Sugar - चीनी - 1 tsp
Coriander Seeds - साबुत धनिया - 1 tbsp
Fennel Seeds - सौंफ - 1 tbsp
Cumin Seeds - जीरा - 1 tsp
Fenugreek Seeds - मेथी दाना - 1 tsp
Carom Seeds - अजवाइन - 1 tsp
Black Pepper - काली मिर्च - 10 - 12
Yellow Mustard - पीली सरसों - 1 tbsp
Mustard Oil - सरसों का तेल - 1/2 Cup
Asafoetida - हींग - 1 pinch
Black Cumin Seeds - कलौंजी - 1/2 tsp
Turmeric Powder - हल्दी पाउडर - 1 tsp
Red Chilli Powder - कश्मीरी लाल मिर्च पाउडर - 2 tsp
Salt - नमक - 2 tsp
Black Salt - काला नमक - 1 tsp
Vinegar - सिरका - 2 tbsp
How to prepare matar pickle?
1. Take 3 cups of water in a vessel and bring it to a boil.
2. Add 1 tsp of sugar to water and boil the water till sugar dissolves. Add 2 cups of green peas to the water and boil them for 1.5 minutes.
3. Turn off the flame and strain the peas. Take a bowl of water with ice cubes and add peas to it.
4. keep them in cold water for 2-3 minutes. Transfer to the strainer and drain the water completely.
5. Spread the peas on a cloth and either pat dry them or leave them under the fan for 15-20 minutes.
6. Dry roast 1 tbsp of dry coriander seeds, 1 tbsp of fennel seeds, 1 tsp of cumin seeds, 1 tsp of fenugreek seeds, 1 tsp of carom seeds, and 10-12 black pepper for 1 or 1.5 minutes.
7. Add 1 tbsp of mustard seeds and roast it together with spices for 15-20 seconds.
8. Once the masala cools down, coarsely grind them in the mixer.
9. Heat 1/2 cup of mustard oil in the pan till it smokes. Turn off the flame and allow it to cool.
10. Add 1 pinch hing and 1/2 tsp of black cumin seeds to the oil.
11. Take peas in a bowl and add coarsely ground spices to the peas.
12. Mix 1 tsp of turmeric powder, 2 tsp of red chili powder, 2 tsp of salt, 1 tsp of black salt, and oil in the peas.
13. Lastly, add 2 tbsp of vinegar and mix well. Leave the pickle for 2 days and stir it once a day.
14. Green peas pickle is ready to be served.

Ingredients to make Golveda ko achar
1. Tomatoes: 1.5 Kg
2. Oil: 150 ml ( 10 ml for 100 grams of tomatoes) :( Sorry, it is written mistakenly 125ml in the video.
3. Red chilli powder: 10 g
