How To make Almond Shorts
1 c Sugar
1 c Sugar, brown
1 ts Baking soda
1 ts Vinegar
1 ts Vanilla extract
3 Eggs
1 lb Butter
6 c Flour
2/3 c Almonds, slivered
Combine sugars, baking soda, vinegar, and vanilla. Stir in eggs. Cut butter into small pieces and work into mixture. Add flour, a cup at a time, and mix well. Knead in almonds. Gather dough into ball and divide into five equal pieces. Roll each piece into a cylinder. If you wish, roll each cylinder in colored sugar. Wrap in wax paper and refrigerate overnight. Preheat oven to 350. Cut each log into 1/4" slices. Bake on ungreased cookie sheet for 8 minutes. "This recipe is a tradition in my husband's Swedish family. Ingredients
Almond Flour 1 cup
Sugar 2tbsp
Vanilla Extract 1 tsp
Water 2tbsp

Brussels sprouts, shredded kale and almond salad
Ingredients:
- 6 shallots, thinly sliced
- 100g (about 3.5 oz) flaked almonds
- 6 tbsp (3 fl oz) olive oil
- 500g (about 1.1 lbs) Brussels sprouts, sliced very thin
- ½ bunch kale, finely sliced
- 2 tbsp miso
- juice of 1 lemon
- salt, to taste
Method:
1. In a large frying pan over medium heat, toast the almonds. Once toasted, remove them from the pan and set aside.
2. In the same pan, add 2 tablespoons of olive oil and sauté the shallots with a pinch of salt until they are soft and fragrant and have some colour.
3. Place the thinly sliced Brussels sprouts and kale in ice water to wash well, then drain thoroughly.
4. To make the dressing, combine 4 tablespoons of olive oil, miso, lemon juice, and a pinch of salt in a jar. Shake well to blend the ingredients.
5. In a large bowl, add the drained Brussels sprouts, kale, half of the almonds, half of the shallots, and the dressing. Toss everything together until well mixed.
6. Serve the salad and garnish with the remaining almonds and shallots.

1 x cup almonds (soaked vernight)
2 x cups water
Dates or maple syrup for a sweet flavour
- Blend all ingredients and strain with a muslin into a bowl .
- Store it for up to 4-5 days in the fridge

1 x cup almond pulp
3 x tbsp peanut butter
1/3 x cup maple syrup
2 x tbsp coconut flour
1 x chocolate bar
Pinch of salt
Optional:cocoa powder, shredded coconut
- Add all ingredients in the blender and mix.
- Roll them into a ball .
- Roll them in cocoa powder or shredded coconut for a nice coating touch ????????
- Store them in the fridge for up to 5 days or freeze them .
