This Apple Pecan Yeast Cake is an Upside Down Cake. It starts with a layer of buttery toasted pecans. Underneath is a sprinkling of cinnamon laced brown sugar that is drizzled with honey. Then comes a layer of thinly sliced apples. All this covers a deliciously soft and fluffy cake that is made with yeast. It is reminiscent of a sticky bun, but a whole lot easier to make. Serve it warm from the oven, at room temperature, or even cold. This is sure to become a family favorite.

BETH'S APPLE SPICE CAKE RECIPE
Serves 10-12
INGREDIENTS:
1 ½ cup (270 g) brown sugar
¾ cup (180 ml) vegetable oil
¼ cup (60 ml) molasses
4 eggs
½ cup (120 ml) apple sauce
1 tsp (5 ml) vanilla extract
½ cup (120 ml) water
2 cups (240 g) flour
2 tsp (10 ml) baking powder
1 tsp (5 ml) salt
1 ½ tsp (7.5ml) ground cinnamon
1 ½ tsp (7.5 ml) ground ginger
½ tsp (2.5ml) ground cloves
½ tsp (2.5 ml) nutmeg
For Garnish:
2 Honeycrisp Apples, sliced horizontally into slices
Glaze:
¼ cup (48 g) whipped cream cheese
1 tbsp (7 g) powdered sugar
1 tsp vanilla
1-2 tbsp (15-30ml) milk, or more to reach a pourable consistency
METHOD:
Preheat oven to 200F (93C).
Line a baking sheet with parchment paper. Slice apples into very thin wheels, cutting the apple horizontally.
Place on baking tray in a single layer. Bake for 1 hour, then flip and bake for 1 hour more. Once done, turn off oven, open oven door and allow to cool for 30 mins. Once done keep at room temperature until ready to decorate cake.
Preheat Oven to 350F (175C).
Prepare a Bundt pan with baking spray (preferably the spray that also has flour in it) coating with a pastry brush to get into all the nooks and crannies and set aside.
In a large bowl, mix together the brown sugar, vegetable oil, molasses, 4 eggs, apple sauce, vanilla and water.
In a medium bowl whisk together the flour, baking powder, salt, cinnamon, ginger, cloves and nutmeg.
Slowly add the dry ingredients to the wet ingredients and whisk gently to combine.
Pour batter into prepared Bundt pan. Bake for 35-40 mins until a long skewer comes out clean.
Once completely cooled, transfer to a cooling rack.
Prepare the glaze by mixing the cream cheese with the powdered sugar and vanilla, whisk until smooth. Add milk and whisk until frosting is pourable, may need to add more milk depending upon which brand of cream cheese you use, some brands are denser than others.
Ladle glaze over the top of the cake crown, allowing it to drip over the sides. Top with the dehydrated apples, transfer to cake stand. Enjoy!

Squeeze an orange and soak the raisins in the juice. Then grate the zest of half a lemon, organic is better. And squeeze out the juice. Now peel the apples, use your favourite: peel off the skin and cut into pieces and remove the core, of course. Drizzle with the lemon juice to prevent them from browning. And repeat with all the apples. Transfer to a blender, along with the orange juice, including the soaking juice of the raisins. Done! In this way, you can taste the flavour of the apples but you won't see them. Firstly sift the rice flour, the corn starch and the baking powder. Secondly separate the egg whites from the yolks, put the egg yolks in a stand mixer with the whisk attachment and add two thirds of the sugar -- in this case, it's raw sugar -- the butter, that has been melted and allowed to cool, the seeds from a vanilla pod and the lemon zest; turn it on, then add the milk in a thin stream.
Add the sifted dry ingredients; this time beat at low speed. Incorporate the flour from the sides of the bowl and mix with the pureed apple mixture. Add half of the raisins and half of the pine nuts. Now beat the egg whites with the remaining sugar until soft peaks form and fold into the mixture. Stir gently to avoid deflating the egg whites, then pour the batter into a cake pan: I'm using a springform pan, 9 ½ inches (24 cm) in diameter, that has been buttered and lined with parchment paper. Finish by adding the remaining fruit: pine nuts and raisins. Bake in a preheated static oven at 350°F (180°C) for about 45 minutes. While it's baking, let's see together the ingredients needed for this recipe.
Ingredients for a 9 ½-inch (24 cm) round cake pan
- 1 lb (500 g) of apples, peeled and cored
- the juice and zest of half a lemon
- less than 1 cup (200 ml) of orange juice
- 3 medium eggs
- ¾ cup (200 g) of raw sugar
- just under ½ cup (100 g) of melted butter
- just under ½ cup (100 ml) of milk
- just over ½ cup (75 g) of corn starch
- ½ cup (75 g) of rice flour
- 1 tbsp (16 g) of baking powder
- 1 vanilla pod
- ⅓ cup (50 g) of raisins
- ⅓ cup (50 g) of pine nuts
- 1 pinch of salt
And here it is! No-one would ever guess it's an apple cake... allow to cool before serving and you'll fall in love with it after the first bite. It makes the perfect breakfast or snack for your family! Cook it yourself and let me know if you liked it!

This Apple Yogurt Cake starts with a wonderfully dense and moist cake that tastes of almonds. The almond flavor comes from adding ground almonds and pure almond extract to the batter.
