How To make Apple Cheese Pie
2 Eggs
1 c Cottage cheese
1 c Sugar
1/8 ts Salt
1 c Cream
1 ts Vanilla extract
1 1/2 c Apples; thinly sliced
1/8 ts Nutmeg
1/2 ts Cinnamon
1/2 c Whipped cream
-cream cheese pastry- 1/2 c Butter
3 oz Cream cheese
1 1/4 c Flour; sifted
1/8 ts Salt
Beat eggs. Add cottage cheese, 1/2 cup sugar, salt, cream, and vanilla. Line an 8 inch pie plate with pastry. Combine apples with 1/2 cup sugar and spices. (The amount of sugar may vary depending on the tartness of apples.) Turn apples into pastry. Cover with cottage cheese mixture. Bake for 10 minutes at 400~ and 25 minutes at 350~ until cottage cheese mixture is set. Remove from oven and let cool. Top with whipped cream or ice cream. PAStrY: Cream butter and cream cheese together. Sift flour once, measure, add salt and cut into cheese mixture until it resembles a fine meal. Wrap in waxed paper, press firmly together; chill. When mixture is chilled, roll 1/8 inch thick on a lightly floured pastry canvas. Fit into pie pan or plate. Bake in a 400~ oven for 12 to 15 minutes.

Today on the old cook book show Glen Cooks an apple pie recipe from 1685. This old recipe is for an apple pie... but not once in the title or the main body of the recipe does it mention or call for apples.
So let's talk about apples - the recipe calls for 'Pippins'; none of the pippins available today are the same as in the 1600s. None of the pippins available today are related to the pippins in the 1600s. In the 1600s the word 'Pippin' meant the fruit of the Malus M. domestica tree - what we would call today an 'Apple'. In the 1600s the word 'Apple' just meant 'Fruit' and was applied to every fruit and many vegetables like tomatoes, potatoes, eggplant, pineapples, etc, etc, etc.
A Made Dish of Butter and Eggs.
Take the yolks of twenty four eggs, and strain them with cinnamon, sugar, and salt; then put melted butter to them, some fine minced pippins, and minced citron, put it on your dish of paste and put slices of citron round about it, bar it with puff paste, and the bottom also, or short paste in the bottom.

Ingredients
6 8 inch Tortillas makes about 24-30 rounds
1 cup graham cracker crumbs
1/2 teaspoon Cinnamon
1/4 cup butter melted
for the cheesecake filling
1 cup heavy cream
1 cup cream cheese softened
1 teaspoon lemon zest
1 teaspoon vanilla
1/4 cup powdered sugar
for the homemade Apple Filling Option
2 Tablespoons butter
3-4 medium apples peeled, cored and diced in to 1/4-inch cubes
1/3 cup brown sugar
3 Tablespoons water
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 Tablespoon + 1 teaspoon cornstarch
2 Tablespoons water
* for the canned apple filling option
1 can apple pie filling
Instructions
Pre-heat oven to 400 F. Combine graham cracker crumbs and cinnamon in a bowl and set aside.
Cut 4-5 rounds out of each tortilla shell with a cookie cutter to get about 24-30 shells. Dip each into melted butter then coat in graham mixture crumbs.
Flip a muffin tin upside down. Place the tortilla pieces in between muffin cups. Bake 10 minutes until just golden brown. Let cool in pan.
In a medium size pan, melt butter, add apples, spices, brown sugar and 3 Tablespoons water. Cook over medium-high heat, for 4-6 minutes or until apples very slightly softened.
In a small dish combine cornstarch and 2 Tablespoons water. Add to pan while stirring and continue to cook until apples are tender, and filling is thickened, about 4-5 minutes. Cool.
Beat cream cheese, heavy cream, powdered sugar, lemon zest and vanilla for 2 minutes, using medium speed, until it thickens. Chill in the fridge for 30 minutes. Transfer to a piping bag.
Pipe the taco shells with cream cheese filling and top with 1/2 tsp apple pie filling. Sprinkle with additional graham cracker crumbs, optional! Enjoy!

The one and only Fabio Viviani is back in the kitchen preparing a sweet and savory dessert, cheddar cheese apple pie with parmesan. Cristina jokes that this is the perfect dish to go with some wine. Fabio even makes his very own dough, creating a nice flaky crust. He places the apples in the pie, then he recommends putting a mixture of lime juice and brown sugar over the apples and says that will prevent the apples from getting soggy when baking in the oven.
