How To make Apple Ricotta Pie
3/4 c Grape-Nuts cereal
2 lg Apples (Rome, Beauty),
-peeled, cored, and -sliced thin 1 ts Lemon rind, grated
1 ts Lemon juice
1/2 ts Cinnamon
1 1/2 c Ricotta
1/3 c Sugar
1 Egg white, and
1 Egg, whole, lightly beaten
1 c Yogurt, plain
Sprinkle the cereal on the bottom of a greased 8" springform cake pan. Arrange the apple slices over the cereal and sprinkle them with the lemon rind, lemon juice and cinnamon. Combine the ricotta, sugar, egg white and whole egg and yogurt in a medium bowl, mixing with a spoon until smooth. Pour evenly over the apples. Bake in a preheated 350 degrees oven for 45 minutes. When cool, go around the circumference of the pan with a knife before removing the side. -----

INGREDIENTS
Apples 2
Ricotta 400 g
Sugar 150 g
Egg 1
Milk 50 g
Potato Starch 70 g
Baking powder 2 teaspoons
Preparation
Put the ricotta in a bowl, soften it with a fork. Add egg, sugar, starch, baking powder and milk, and then mix it until it becomes a thick cream without lumps.Wash and peel the apples, cut them into thin slices. Pour the dough in a mold lined inside with parchment paper.Top it with slices of apple. Bake in preheated oven on 160 degrees for about 40 minutes.Once baked, let the pie cool and then serve it with a vanilla icing sugar.

The delicate flavors of the apple, ricotta, lemon and vanilla are so perfectly balanced together. I added a couple of little tweaks (vanilla and lemon juice) to elevate this fluffy, buttery, golden brown dessert into something that transports you to a balcony somewhere in a little Italian town during a breezy Summer morning with every bite (seriously, try it if you're into that kinda thing).
The original recipe:
Equipment: 10 inch round cake pan
Ingredients
9 tablespoons unsalted butter, at room temperature
1 cup plus 2 tablespoons sugar
3 large eggs
1 1/4 cups all-purpose flour
1 pinch salt
1 cup fresh ricotta
Zest of 1 lemon
1 tbsp of lemon juice
1 tsp vanilla extract
1 tablespoon baking powder
1 apple, peeled and grated (should yield about 1 cup)
Confectioners' sugar for serving
Note: If you notice that there's a bit of excess liquid from either your grated apples or ricotta, go ahead and soak up or drain it to prevent a runny batter.
