Parsnip and Apple Soup with a Parmesan Chive Foam - A Princess Diana Favorite
I made this delicious soup from my cookbook Eating Royally (link below) for Princess Diana about once a week. This was one of her favorites and she enjoyed it with a bowl of salad for lunch.
She would come into the kitchen at lunchtime, pull up a chair and eat at the kitchen table. I can see why this was one of her favorites. It's soothing and comforting and absolutely delicious (and easy to make too)

PUMPKIN APPLE SOUP - Mrs Vahchef
Mrs.Vahchef is very fond of cooking and her Recipes are very unique and fit for busy women specially working women
A sweet and rich soup made from pumpkin and apples, garnished with mint leaves with the flavors of orange.
Ingredients:
Butter ½ tsp
Ginger(finely chopped) ½ tsp
Cinnamon 2inch 2 stick
Onions 1
Salt to taste
Pumpkin(grated) 1 cup
Apple(finely chopped) 1
Sugar 1 tbsp
Orange zest ½ tsp
Orange juice 1 tbsp
Lemon juice 2 tsp
Mint leaves ¼ bunch
Method:
1. Take butter in a hot container then add ginger, cinnamon and sauté it.
2. Now add onions, salt, and mix it properly.
3. Once it becomes little transparent add grated pumpkin and sauté for just 1min.
4. Add apple pieces with water, sugar and cook for 3-5 min with a lid on it.
5. After 5 min when the apple pieces become soft switch off the flame and remove the cinnamon stick aside to blend it.
6. When the paste is ready add orange zest, orange juice and lemon juice in to it.
7. Add little salt if needed and garnish with mint leaves.
