“Groomsman” Dynamic Duos™ Stenciled Cookie

Hi, everyone! I’ve got another fun pair of stencil sets – one of my very own Dynamic Duos™ designs - to share with you. About a year ago, I introduced my “Bridal Party” Dynamic Duos™ sets, which were designed for bridesmaids’ gifts and bridal parties. And, because they were so wildly successful, I decided to introduce a groom’s or groomsmen’s version of those sets, just in time for fall weddings!
I get into all of the details of these sets in the video. The key thing to know is that this design, like all of my Duos™ designs, is comprised of two complementary sets – a background set with pictures/imagery and a message and frame set with related messages and frames, naturally! And, with just these two sets, you can create a plethora of designs – with just two colors in this case. The need for only a few colors is another reason I love this particular design.
In addition to showing you how to use these sets on cookies, I brief you on fondant appliqué, extruding, and modeling techniques used for embellishments to go on top. I also show how to get more mileage out of a single airbrush coloring simply by adjusting your triggering and coverage through shading and outlining techniques.

土凤梨酥 不添加冬瓜 菠萝香气十足 外皮入口即化 Pineapple Cookies
凤梨酥是一款受到很多人喜爱的台湾小吃。自己手工制作的凤梨酥不添加冬瓜,全部使用新鲜菠萝制作,做出的凤梨酥带着菠萝的香气,内馅湿润不会过甜,并且带有淡淡的菠萝天然的果酸,外皮入口即化,尽管制作需要花上一些功夫,但是比商店购买的成品要美味很多哦~
材料:
新鲜菠萝1个,去皮后大约600g果肉
冰糖 110g
麦芽糖 110g
无盐黄油 150g
糖粉 35g
鸡蛋液 55g
低筋面粉 190g
杏仁粉 25g
奶粉 25g
盐 2g
烘烤:165°C/330°F 烤24分钟,中间13分钟过后取出翻面。
我使用的烤模尺寸:28mm*28mm*81mm
如果使用不同尺寸需要按体积同比例调整每份面团和内馅的重量
Ingredient List
1 Fresh Pineapple, 600g after peeled
Rock Crystal Sugar 110g
Maltose 110g
Unsalted Butter 150g
Powdered Sugar 35g
Beaten Egg 55g
Cake Flour(Low Gluten Flour, can be substitute with AP) 190g
Almond Flour 25g
Powdered Milk 25g
Salt 2g
Baking:165°C/330°F for 24 mins, flip the cookies over after 13 mins of baking.
Size of my mold:28mm*28mm*81mm
Adjust each portion according if using a smaller mold.

How do you get a personalized stamp on a fondant covered sugar cookie?
A personalized stamp on a fondant covered sugar cookie is so special. Unbelievably, they are quick and easy to decorate. I recently offered to bake and decorate several batches of my best sugar cookie recipe as favors for my nephew’s wedding. I use a heart shaped cookie cutter to cut the cookies, as well as the fondant. In fact, it is one in the same. Since my sugar cookie recipe spreads slightly upon baking, it makes it the perfect size for the fondant applique. Yes, these are appliqued cookies. I have not used royal icing to frost these cookies. You may even find this method of decorating easier to accomplish if your hands are shaky or you don’t have the confidence to draw patterns.

If you don’t know what fondant is, here is Wikipedia’s definition: Fondant icing, also commonly referred to simply as fondant (/ˈfɒndənt/, from the French: [fɔ̃dɑ̃] About this sound listen (help·info)), is an edible icing used to decorate or sculpt cakes and pastries. It is made from sugar, water, gelatin, and glycerol. It does not have the texture of most icings; rolled fondant is akin to stiff clay, while poured fondant is a thick liquid. The word, in French, means “melting”, coming from the same root as fondue and foundry.
So,a little bit of fondant (that you can purchase at the store or make yourself), some sugar adhesive and a stamp kit are all you need. Fondant is a tasty vanilla flavored icing too. Join me as I roll, adhere and stamp almost 200 cookies for my Nephew’s wedding. These treats make wonderful wedding favors, engagement party cookies, and the list goes on… Let your imagination guide you!
