How To make Asparagus Almondine
1/4 c Finely chopped almonds
1/2 c Butter
1 t Tarragon vinegar
20 oz Frozen asparagus spears,
-cooked and drained 1. In a small, heat-resistant, non-metallic bowl, place almonds and butter.
2. Heat, uncovered, in Microwave Oven 1 1/2 minutes or until nuts are
lightly browned. 3. Stir in vinegar.
4. Pour sauce over hot or cooled asparagus.

Betty demonstrates how to make Sauteed Asparagus with Toasted Almond Slices. This is a beautiful green vegetable for the Easter table.
Sauteed Asparagus with Toasted Almond Slices
1 pound fresh asparagus, washed and patted dry with paper toweling
3 tablespoons melted butter, separated
¼ cup sliced almonds
salt and pepper, to taste
Place asparagus on a cutting board, aligned in a bunch. Pick a couple of the asparagus spears and bend them until the end breaks off. Use this as a guide in cutting off the tough ends of all asparagus spears. Discard the ends or save for soups, etc. Place asparagus spears in a saute pan, along with 2 tablespoons melted butter. At the same time, place sliced almonds in a small skillet, along with 1 tablespoon melted butter. Over low to medium heat, saute the asparagus and toast the almond slices, tending closely, for about 8 to 10 minutes, until asparagus is crisp-tender and almonds are lightly browned. Season asparagus with salt and pepper, to taste. Use tongs to lift asparagus out of saute pan and into a serving bowl, maintaining the alignment. Sprinkle toasted almonds in a strip across the center of the sautéed asparagus. Serve immediately. Enjoy! --Betty

Super Delicious Roasted Asparagus with Sliced Almonds!
Are you an Asparagus hater? Think again, try this recipe and you be a fan of this nutritious Veggie!
Husband and kid tested in my kitchen;-)
Recipe:
2 to 3 packages of fresh clean Asparagus
1/2 Sweet Onion sliced
Pink Salt to taste
1 tbsp California Style Course Ground Garlic Powder with Parsley or to taste
2 tbsp Extra Virgin Olive Oil
Fresh Ground Black Pepper to taste
8 Oz shredded carrots
1 Cup sliced mushrooms (optional)
3/4 Cup blanched sliced Almonds
1/2 to 1 Cup Vegan Mozzarella Cheese (I use Dayia)
Preheat oven to 350 Degrees
Line large cookie sheet with parchment paper
Mix above ingredients and toss well
Place on cookie sheet and spread out evenly
Roast for 20 to 30 minutes then check and turn
Roast an additional 20 minutes
Add the cheese and roast for additional 5 minutes
Enjoy!
