How To make Bagels 1
2 c Warm water
2 pk Active dry yeast
3 tb Sugar
3 ts Salt
5 3/4 c Flour
3 qt Water
1 tb Sugar
1 Cornmeal
1 Egg yolk
1 tb Water
Combine warm water, yeast and sugar. Let stand 5 minutes, stir in salt. Gradually mix in 4 cups of flour, beat at medium speed for 5 minutes. With spoon add 1 1/4 cups more flour to make a stiff dough. Turn out on a floured board and knead until smooth, elastic, and no longer sticky (about 15 minutes), adding more flour as needed. Dough should be firmer than for most yeast breads. Place in a greased bowl, cover, let rise until almost doubled (about 40 minutes). Knead dough lightly and divide into 12 equal pieces. To shape, knead each piece, forming it into a smooth ball. Holding ball with both hands, poke your thumbs through the center. With one thumb in hole, work around perimeter, shaping bagel like a doughnut 3 to 3 1/2 inches across. Place shaped bagels on lightly floured board, cover lightly and let stand in a warm place for 20 minutes. Bring the 3 quarts of water and 1 tbls sugar to boiling in large kettle. Adjust heat to keep it boiling gently. Lightly grease baking sheet and sprinkle with cornmeal. Heat oven to 400 degrees. Gently lift one bagel at a time and drop into water, boil about 4 at a time, turning often, for 5 minutes. Lift out with slotted spatula, drain briefly on a towel and place on baking sheet. Brush with glaze made with 1 egg yolk and 1 tbls water. Bake 35 - 40 minutes, or until well browned and crusty. Cool on rack. WHOLE WHEAT BAGELS: Follow basic recipe, omitting sugar. Use 3 T honey instead. In place of flour, use 2 cups whole wheat flour, 1/2 cup wheat germ, and
about 2 3/4 cup all purpose flour, blended together. Knead with white flour. PUMPERNICKEL BAGELS: Follow basic recipe, omitting sugar. Use 3 T dark molasses in place of sugar. In place of flour use 2 cups rye, 2 cups whole wheat, 1 3/4 cups all purpose flour blended together. Knead
with white flour. ONION BAGELS: Add 1/2 cup instant toasted onion to basic dough with the yeast , water and sugar in basic recipe. SEEDED BAGELS: Springle boiled bagels with sesame seed, poppy seed, or caraway seed after using egg wash and before baking.

How to Make Bagels: Chewy and Golden Homemade Bagel Recipe
500g x Strong White Bread Flour
5g x Dried Yeast
10g x Fine Salt
250ml x Warm Water
20g x Caster Sugar
50ml x Vegetable oil + Extra for greasing
To Glaze
1 x Free Range Egg (beaten)
Seeds of Choice
1. Place the flour, yeast, salt, water, caster sugar, and vegetable oil into a bowl.
2. Mix to form a dough and then turn it out onto a clean work surface and knead for 5 to 10 minutes until smooth and elastic. Shape into a ball and place into an oiled bowl, cover with a clean damp tea towel, and allow to rise until it has doubled in size.
3. Once doubled in size knock the air out and divide the dough into 12 equal-sized pieces.
4. Roll each dough piece into 12 to 15-cm sausage shapes. Wet each end with water and press together to form a ring. Leave to prove on a lightly oiled metal or plastic tray and cover with a damp clean cloth until doubled in size.
5. Preheat the oven to 200°C, lightly oil some baking sheets and place a large, wide pan over medium heat with roughly 10cm depth of water in and bring to a boil.
6. Once they have doubled in size they are ready for poaching, you will need to do this in batches. Turn the water down to a simmer and gently place the bagels in and cook for one minute on each side. Place onto a clean tea towel to drain.
7. Place the poached bagels onto the oiled baking trays and brush them with the beaten egg. Sprinkle with seeds of your choice or leave plain. Bake in the preheated oven for 15 minutes until glossy and golden brown. Place on a cooling rack to cool.

Vegan Bagel Recipe
1 1/4 cup warm water
1 1/2 tablespoon sugar
2 teaspoons (one package) active dry yeast
3 1/2 cups bread flour
1 1/2 teaspoons salt
Add sugar to warm water. Stir to dissolve. Then add 1 package of yeast. Stir and set aside for 6-8 minutes. The water should be lukewarm. If it's too hot, the yeast will deactivate. When ready, the yeast will look frothy and smell bread-like.
In the meantime, grab a large bowl and combine flour and salt. Stir to combine.
Then, pour yeast into flour mixture and stir until a shaggy dough appears. .
Transfer to a clean, lightly floured surface and knead for 6-7 minutes or until the dough is well combined and elastic. It should be smooth and bounce back when you press into it.
Form the dough into a ball and it place in a lightly sprayed bowl. Cover lightly and let rest in a warm place for 1 - 1.5 hours. Tip: Resting in a warm place helps yeast expand, which creates a nice, fluffy dough.
At this point, the dough will have doubled in size. Score into 8 even pieces and form into balls. Place on baking sheet, cover, and let rest for 10 minutes.
During this time, bring a large pot of water to a boil and preheat oven to 425 degrees. Gently drop bagels into boiling water. Tip: you can add 2 tsp of maple syrup to the boiling water before adding the bagels to add a little more color and flavor if desired.
Boil each bagel for 45 seconds on one side, then flip and cook for another 45 seconds. Remove bagels from pot (carefully) with the end of a wooden spoon or a slotted spoon. Place bake on baking sheet and bake for 15 minutes.
If desired, remove from oven and brush with water. Sprinkle with sesame seeds and return to oven for 5 minutes. TIP: Add toppings quickly so bagels temperature doesn't drop too much.
Serve warm with your favorite bagel toppings!
I love vegan cream cheese or peanut butter :)
Note: These bagels don't contain any preservatives, which is good news for your body, but it means they don't stay fresh for too long. I like to let the bagels cool completely, slice any leftovers in half and then freeze to maintain the freshness.That way, whenever you're craving a bagel, just remove from freezer, pop it toaster, and your bagel will be fresh and delicious again.
