BBQ Chicken Recipe with Lentils & Baby Spinach | Woolworths
An easy chicken recipe and great BBQ recipe. If your BBQ does not have a hood, use an upturned baking tray.
Prep: 15 mins | Cook: 30-40 mins | Serves: 4
Ingredients:
2 tablespoons Woolworths Select Spanish Classic olive oil
2 tablespoons fresh thyme leaves, chopped
½ cup fresh continental parsley leaves, chopped
1 lemon, zest and juice
1.6kg Macro free range whole chicken
2 lemons, halved
1 small onion, finely chopped
2 garlic cloves, crushed
½ tablespoon Woolworths Select ground chilli
420g can Woolworths Select lentils, rinsed and drained
1 cup Woolworths Select Greek yoghurt
1 tablespoon Woolworths Select smoked paprika
150g bag Select baby spinach leaves
Method:
1. Combine 1 tablespoon of oil, chopped herbs, lemon zest and juice in a large bowl. Season. Place chicken, breast side down, on a clean work surface. Use sharp kitchen scissors to cut on either side of backbone and discard backbone. Press the chicken flat to crack the breastbone - butterflying it. Add marinade to chicken, rub to coat. Heat the barbeque grill to medium. Place the chicken, skin-side up, on the grill. Cook, covered, for 10 minutes and then turn over. Cook, covered, for a further 15 minutes or until the juices run clear when the thickest part of the chicken is pierced with a skewer. Transfer chicken to a platter, cover with foil and rest for 10 minutes. Place lemon halves on grill. Cook for 1-2 minutes or until caramelised.
2. Meanwhile, heat remaining oil a frying pan over low heat, add onion and garlic, cook, stirring constantly for 5 minutes or until softened. Add chilli powder and cook for 1 minute. Add lentils and stir to heat through. Transfer to a bowl, cool slightly. Stir through yoghurt, paprika and spinach. Season to taste.
3. To serve, carve the chicken. Divide lentil and spinach over a large platter, top with chicken pieces. Serve with grilled lemon.
Tip 1: Replace the chilli powder with dried chilli flakes
Tip 2: If your barbecue does not have a hood, use an upturned baking tray.
Tip 3: Replace whole chicken for chicken breast steaks and cook for 1-2 minutes on each side.

Potato Salad:
Bourbon BBQ Chicken
2 lb chicken
1 1/2 tbsp bourbon seasoning ( season to taste depending on the amount of chicken you have)
olive oil
mandarine orange or orange, juice and zest (if using a whole orange, only zest about 1/2 of the orange. Too much orange zest can make a dish bitter so don't add too much)
bbq sauce
lentils and rice
3/4 cup lentils
1 1/2 cup rice
4 cups water ( add to lentils to cook them, this will also be used for the rice)
1/2 can coconut cream ( can sub coconut milk)
green onion
thyme
1/2 tsp Vegeta
Salt / pepper to taste
1 1/2 tbsp green seasoning (can sub fresh garlic, onion, and cilantro)
0
allspice
bayleaf
scotch bonnet
*Note: For this recipe the amount of water you add may need to be adjusted for the rice depending on how much burners off and is absorbed by the lentils. Alot of water burned off when I was cooking the lentils so I checked it and adjusted it as needed, but I started with the amount listed above.
