Rum soaked then smoked ribs on propane grill.
Rum Smoked Ribs - smoked and caramelized using a propane grill. Meat falls of the bone, tender, sweet and boozy! Soaked in rum, butter and pineapple!
This cookout has ingredients from all over the world though you will find an “island” theme throughout. Not everyone has access to a smoker so we opted for the propane grill today. If you have a smoker, please use it. For those that don’t, you can still make incredible ribs that fall off the bone on your propane grill if you believe in yourself and follow these instructions.

Rum Smoked Ribs
Ingredients:
1 Rack of Ribs
1/2 Cup Rum
1/3 Cup Razzle Dazzle
3 ground cloves
1 Pinch ground nutmeg
6oz Pineapple Juice
2 Tablespoons butter
Foil to wrap ribs
Foil for “Smoker Box”
Wood chips of your flavor
Rib Instructions
Remove membrane and marinate ribs in a nonreactive dish with 1/2 cup rum and ground cloves for 2-4 hours in the fridge, flipping occasionally. Remove from fridge 30 min before cooking and pat dry.
Place wood chips in foil or smoker box. Light one end of grill over medium heat and place smoker box on grill grates above heat. Allow the grill to heat for 10 minutes and adjust the heat so that’s consistently between 250 and 270°F
Mix the rub by adding 1/3 cup HLMBBQ Razzle Dazzle with one pinch of ground nutmeg. Season both sides of the ribs with rub and place on indirect heat portion of the grill.
Grill indirect for 1.5 hours or until meat starts to pull back on rib bone.
Wrap the ribs tightly in foil, butter and pineapple juice and place back on the smoker for another 1.5 to 2 hours. They are done when they bend easily in the foil. Remove the ribs carefully not to burn yourself. Flip them over on a cutting board so you can see between the bones and cut the ribs. Serve with Summer Punch and grilled veggies.

Step 1: Dry Rub
Ingredients
* Mustard
* Liquid Smoke
* 2 racks baby back ribs
* 1 tbsp Salt
* 1 ½ tbsp Brown Sugar
* 1 ½ tbsp Smoked Paprika
* 1 tsp Black Pepper
* 1 tsp Cayenne
1) In a small bowl, whisk together mustard and liquid smoke then rub it all over the ribs.
2) In a separate small bowl, whisk together the salt, brown sugar, smoked paprika, black pepper, and cayenne. Sprinkle the dry rub all over the ribs, wrap in plastic wrap, then let sit in the fridge for at least 4 hours, or better overnight.
3) Preheat your oven to 350 degrees. Remove the ribs from plastic wrap, pat dry but not too aggressively, then wrap in foil. Place on a baking sheet and put in the oven for 3 hours.

* That one big cutting board we have
* 2 spoons
* Pastry brush
* Plastic wrap
* Tin foil
* Paper towels
Step 2: Jack ‘n’ Coke BBQ Sauce
Ingredients
* 3 12 ounce cans Coca Cola
* ½ cup Jack Daniels
* ¼ cup brown sugar
* ½ onion
* 3 cloves garlic
* 2 Tbsp tomato paste
* 1 ½ Tbsp dry rub
* ¼ cup white vinegar
* 1 Tbsp worcestershire sauce
1) Heat a large stock pot on high heat and add Jack Daniels, cola, and brown sugar. Remove the skin from your onion, cut it into quarters, and toss them into the pot along with peeled and smashed garlic cloves.
2) Allow the liquid to rapidly boil for 20 minutes, then strain out the onion and garlic. Add in tomato paste, dry rub, worcestershire, cider vinegar, and hot suace. Allow to cook down for an additional 40 minutes, then blend using either a stick blender or conventional blender. (If you do not have a blender, you can mash the cherries with a potato masher then strain the sauce.) Reserve for later.

Step 3: Baste and Blast
Ingredients
* Cooked racks of ribs
* BBQ Sauce
* Scallions for garnish
1) Crank the oven to 450 degrees. Remove ribs from the tin foil and dump any excess liquid. Use a pastry brush—or a spoon, yolo—to brush the BBQ sauce on top of the ribs, then throw back in the oven for 10 minutes, until the sauce becomes sticky and caramelized. Repeat this process one more time, brush and bake, then remove and top with thinly sliced scallions if you like.

Caribbean Ribs with a Mango Rum BBQ Sauce and a smokey cocktail!
A How to video recipe-
This weekend I made Caribbean style ribs with a mango rum BBQ sauce. It had a nice kick to it. I paired it with a smoked cocktail.

Smoked Ice.
I place some ice in a bowl and put it on the smoker for about 30-40 minutes then removed it to cool off. I then poured the water into ice trays and re-freezed for 8 hours.
