The Best Fudgy Brownies
Servings: 9
INGREDIENTS
8 ounces good-quality chocolate
¾ cup butter, melted
1¼ cups sugar
2 eggs
2 teaspoons vanilla
¾ cup all-purpose flour
¼ cup cocoa powder
1 teaspoon salt
PREPARATION
Preheat oven to 350°F/180°C.
Chop the chocolate into chunks. Melt half, then save the other half for later.
Mix the butter and the sugar, then beat in the eggs and vanilla for 1-2 minutes until the mixture has become fluffy and light in color.
Whisk in the reserved melted chocolate (make sure the chocolate is not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt.
Fold the dry ingredients into the wet ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.
Fold in the chocolate chunks, then transfer the batter into a parchment paper-lined square baking dish.
Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.
Slice, then serve with a nice cold glass of milk!

The World’s Best Brownies
2 1/2 sticks butter, room temperature
8 oz. semi sweet baking chocolate bar
3/4 cup unsweetened cocoa powder
1 Tablespoon espresso powder
2 cups sugar
1/2 cup brown sugar
2 teaspoons vanilla
2 teaspoons salt
6 eggs
1 cup all-purpose flour
Preheat oven to 350°. Spray a dark metal 9 x 13” pan with nonstick spray.
Combine the chopped chocolate bar, 1/4 cup of the cocoa powder, and the espresso powder. Set aside.
Melt the butter, approximately 30 seconds, in the microwave. Immediately pour the hot melted butter over the chocolate bars, cocoa powder, and espresso powder. Cover this so the hot butter will melt the chocolate. Wait about two minutes, then stir until the chocolate bar is completely melted and smooth.
In a mixing bowl, combine the sugar, brown sugar, vanilla, salt, and eggs. Beat on medium to high for 10 minutes.
While the mixer continues to run, slowly pour in the slightly cooled butter/chocolate bar/espresso mixture. Beat until just incorporated and smooth. 
In a medium bowl, sift together the flour and the remaining 1/2 cup of cocoa powder. Add to the mixing bowl and beat on low until the flour/cocoa is incorporated. Do not over mix! 
Pour the batter into the prepared 9 x 13“ pan. Smooth top. Bake for 20 minutes. After 20 minutes, remove the pan from the oven and drop it on your countertop three times. Return it to the oven and bake for an additional 15 to 20 minutes until the center is almost set. The center may seem to be a little under baked but it will set up as the brownies cool. Place the brownies on a cooling rack to cool completely.
Brownies may be eaten plain or topped with the “Perfect Chocolate Buttercream Frosting.” The frosting recipe is posted as a separate recipe.


Best Ever Brownies
These are the best ever chocolate brownies with a buttery-salty edge! I'm famous for these and you can be too!
Here is the recipe and list of the ingredients and specific brands that I used so that you can replicate the Best Ever Brownie's in the video:
Ingredients: Preheat oven to 350
Melt together in a saucepan on the LOWEST setting:
3 ounces unsweetened chocolate, 100 % dark chocolate, or 85%
1/2 cup unsalted European butter( Plugra brand was used int he video)
Watch carefully so it doesn't burn!
When melted remove from heat.
In a separate large bowl whisk together until combined really well:
2 large eggs
1 1/4 cups white sugar ( if using 100 % dark chocolate), If using 85 % dark chocolate, use only 1 cup white sugar
2/3 cup all purpose flour (Gold Medal brand unbleached)
1 teaspoon vanilla extract
1/4 teaspoon salt
Now whisk in the melted chocolate and butter combination.
Then lastly, stir in the chocolate chips:
1/2 cup chocolate chips, Ghirardelli 60% chocolate
optional: 1/2 cup chopped nuts, anything you like.
Line 8x8 metal pan with parchment paper, then grease heavily with salted butter at room temperature so that it smooths out easily on the bottom and up the sides of the pan. I like a thick layer!
Pour the batter into the pan, smooth out to the sides, and bake in 350 oven for 27 minutes.
Let cool in pan 15 minutes, then lift out the brownies holding the parchment paper and lifting out the brownies. Set aside to finish cooling on a rack.
Dust the tops when cool with confectioners sugar, using a little sifter. Cut into squares...ENJOY!
They're so good when they are still warm.

• 2 teaspoons vanilla extract

1️⃣ 00:00:26 - Preheat oven to 350 degrees F. Line a metal 9x9 pan with parchment paper.
