How To make Boiled Custard Eggnog
1 1/2 c Sugar
1/4 c Flour
1/8 ts Salt
8 Egg yolks
6 c Milk
2 c Light cream
1 ts Vanilla extract
1/8 ts Nutmeg
1 1/2 c Whiskey (optional)
Mix sugar, flour, and salt in heavy 6-qt saucepan. Add egg yolks and mix well. Using wire whisk, stir egg mixture and slowly pour in milk and cream. Cook over low heat, stirring constantly, until custard is thickened and just coats the back of a wooden spoon. Remove from heat and let cool. The custard will thicken as it cools. When cold, stir in vanilla, nutmeg, and whiskey.

The scent of balsam, the taste of cinnamon, the sound of a special album, these are the tastes, smells and sounds that are Christmas for so many. For me and my family, for generations, the taste of Christmas Day has to be Boiled Custard. I can remember my first taste at my Great-Grandmother's on Christmas Day. She always made a huge batch and served the sugared elixir in Dixie cups. The explosion of comforting taste was like no other as a child. Boiled Custard is like a magical concoction of creme brûlée, milk, caramelized sugar and vanilla and other flavors that really has to be experienced. It's rich to say the least, but wow! Super Easy Homemade Eggnog
Yes you need egg yolks to make eggnog. In my opinion this is so easy to make that I think more people should be making their own eggnog instead of buying it. The Holidays can make everyone a little crazy, but it's easier to relax when you're sitting with a nice chilled glass of homemade eggnog.

Here in the southern U.S. boiled custard is a Christmastime staple. Until a few years ago I had no idea how easy it was to make myself and now I will NEVER go back to store-bought. And the best part – my wife’s grandmother says it’s just like her grandmother used to make. Can’t argue with Memaw!
RECIPE (single batch)
• 1 quart whole milk
• 5 eggs
• 1 cup white sugar
• 1 tsp vanilla extract
• Pinch of salt
1. Heat milk on stovetop in a heavy-bottom pan (or double boiler). Target temperature is approx. 180F. Stir occasionally.
2. While the milk is heating, beat eggs together until light. Add the sugar and mix well.
3. Once the milk is warmed, pour a small amount of milk into the egg mixture to thin. Then slowly pour egg mixture into hot milk, stirring constantly.
4. Cook until the custard is thick and will coat the back of a spoon. Target temperature is approx. 180F. DO NOT OVERCOOK.
5. Remove from heat, stir in vanilla. I like to strain my boiled custard through a very fine strainer to remove any egg that may have cooked (trust me, a slight eggy taste or smell won’t be the worst thing but a chunk of egg will ruin a good time).
6. Chill completely and enjoy!
