Colombian buñuelos Navideños are quite different from any buñuelos I'd seen before. These buñuelos are more akin to Brazilian pan de queso than they are to the flat, sweet buñuelos of Mexico. A Colombian cheese called queso costeño is used in Colombia. Lacking that, use Mexican queso cotija, and lacking that you could try it with some dry feta cheese. When making the dough, grate the cheese as finely as possible; it should be like fine bread crumbs to get the right look and texture for the final product. The dough will be smooth and fairly soft and should easily roll into balls without sticking to your hands. Adjust the amount of milk if necessary to get a consistency like that shown in the video.

INGREDIENTS
3 cups all purpose flour (410 grams flour)
1 tsp baking powder (4 grams baking powder)
1 tsp salt (5 grams salt) *use salt of choice
1/4 cup lard or shortening (60 grams) or (59 ml) if using oil
8 oz cinnamon tea / hot water (236.59 ml tea / water )
oil for frying
FOR TEA
1 1/2 cup water
1 cinnamon stick
1 tsp whole anise seed
SUGAR COATING DREDGE
2 cups sugar
1 Tbsp ground cinnamon
1/4 tsp fine salt (optional)

How To Make THE PERFECT BUÑUELOS EVERY SINGLE TIME | Buñuelos de Viento
Hello my beautiful fam!! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! ❤️
Today I’m going to be sharing with you how to make buñuelos de viento, also known as Mexican crispy pastry! I known these as bimbuñuelos, because that’s how my grandma used to call them. Let me tell you these are so easy to make! The trick is to ensure that the mold is hot and the oil is not burning hot, that’s why is important to keep the heat on medium by doing so you will ensure that the oil stays at the heat it supposed to! Every time I make them I never have an issue and I finish all the batter without waisting any ???? another trick is to make sure the batter doesn’t go over the mold otherwise they batter will have no way of detaching from the mold. When my grandma used to make them she used to make them outside on a big cazo and she will do about 4-5 at a time making the process super fast doing one by one can be time consuming and seriously that’s the hardest part! Get creative and make them this Christmas I guarantee you your family will be amazed! ????

Tip!!! Get creating for the Christmas add food coloring to batter before letting it sit!
Don’t want to use blender? No problem whisk in dry ingredients with wet ingredients, make sure no clumps are formed!!!

2 eggs

Los auténticos BUÑUELOS DE VIENTO. La receta más fácil del mundo
Receta de BUÑUELOS DE VIENTO:
Ingredientes:
150 g de harina
250 ml de agua
4 huevos L
50 g de mantequilla
5 g de sal
50 g de azúcar para rebozar
Aceite para freír
Preparación:
1.- En un cazo al fuego, calienta el agua junto con la mantequilla y la sal. Cuando comience a hervir, añade toda la harina de golpe. Remueve con la espátula hasta obtener una masa muy espesa y retira del fuego. Deja reposar 5 minutos.
2.- Añade un huevo y mezcla con la espátula de madera hasta que la masa vuelva a espesar. Primero tendrás una masa desligada, pero poco a poco se ligará y espesará de nuevo. Añade el segundo huevo y repite sucesivamente hasta haber añadido los cuatro huevos.
3.- Calienta el aceite en una sartén y toma una porción de masa con una cucharilla. Con la ayuda de otra cucharilla, deja caer la masa en la sartén y forma así unos cuantos buñuelos. No llenes la sartén. A medida que se fríen, los buñuelos se irán dando la vuelta sin ayuda. Verás que se abren y se ahuecan, es normal. Cuando estén bien doraditos, retira a un plato con papel absorbente y, antes de que se enfríen, pásalos por azúcar. Si se enfrían, el azúcar no se adhiere.
Consejo: Rellena tus buñuelos con nata montada con azúcar o crema pastelera.
