How To make Buttermilk Waffles
BUTTERMILK WAFFLES:
2 c Flour
2 ts Baking powder
1 tb Sugar
1/2 ts Salt
1/2 c Chopped cashews
2 Eggs
1 3/4 c Buttermilk
4 tb Melted butter
2 Egg whites
BLUEBERRY TOPPING:
3 tb Sugar
2 tb Lemon juice
3 tb Water
1 pt Blueberries
COMBINE FLOUR, BAKING POWDER, sugar, salt and cashews in a mixer. Add the eggs and buttermilk and mix at medium speed until smooth. Add the melted butter and mix until incorporated. In another bowl, beat the egg whites until stiff and fold into the batter. Heat your waffle iron and cook your waffles as usual. BLUEBERRY TOPPING: COMBINE THE SUGAR, LEMON AND WATER in a 1 quart pot and cook over medium heat until the sugar melts. Pour in the blueberries and cook, stirring, for 1 minute. Pour into a bowl and let cool before serving.

BELGIAN WAFFLE RECIPE
Ingredients
250g | 2 Cups Flour
1 Tablespoon Baking Powder
½ Teaspoon Salt
2 Tablespoons Sugar
2 Eggs, separated
80ml | ⅓ Cup Oil
500ml | 2 Cups Milk
1 Teaspoon Vanilla
Instructions
Sieve the dry ingredients into a large sized mixing bowl. Mix with a whisk so everything is evenly combined.
Seperate the two eggs, placing the yolks into the bowl with the dry ingredients and the whites into a clean bowl.
Measure out the oil, vanilla, and milk and pour into the bowl with the dry ingredients. Give this a mix with a whisk until there is no longer any dry flour.
Use a hand mixer or a whisk to whip the egg whites to stiff peaks. Fold the egg whites into the batter until well combined.
Heat a waffle iron and spray with oil or brush on some melted butter.
Measure out around ¾ of a cup of batter and pour into the waffle iron. Leave to cook for 5-10 minutes until browned and crispy.
Serve with berries, whipped cream and maple syrup.
Notes
These waffles are best served straight out of the waffle iron. To keep them crispy, place the waffles in a single layer on a cooling rack and into a 180c|350f oven until you are ready to serve.

Buttermilk Belgian Waffles Recipe
Buttermilk makes these belgian waffles light and moist. They will still come out crunchy outside (if your waffles iron is hot enough) but they will taste buttery and will be moist. I find this belgian waffle recipe is a good balance of texture. When you use milk only instead of buttermilk the waffles will be tougher and drier inside.
Ingredients
- 1 egg
- 2 tbs of sugar
- 2 tbs melted and cooled butter
- 1 cup all purpose flour
- 1 cup of buttermilk
- 1/4 cup of milk
- 1 tsp baking powder
- 1/4 tsp baking soda
