►2 1/4 lbs granny smith apples (6 medium apples)
►1 tsp cinnamon
►8 Tbsp unsalted butter
►3 Tbsp all-purpose flour
►1/4 cup water
►1 cup granulated sugar

One bite and you’ll appreciate what all the fuss is about - this APPLE PIE GRILLED CHEESE is delish!
This APPLE PIE GRILLED CHEESE was added onto our content calendar almost as an afterthought. Carol and I were brainstorming ideas for our upcoming Easy 1-Minute videos, and I tossed out some grilled cheese ideas. We both agreed it would be perfect and I promised her I’d make something both fun and easy.
Then two things happened: I made our BUTTERMILK BISCUITS and ended up with leftover cheddar cheese, plus some of my favourite varieties of apples started appearing at my local farm stand. You get the picture – apples with cheddar cheese is such a perfect combination – next thing you know I was firing up the griddle, all ready to make APPLE PIE GRILLED CHEESE!
Here are a few things to consider:
SIMPLE STUFF
There is nothing complicated about this recipe, and there’s a real beauty in its simplicity. You probably already have all of the ingredients on hand, but if not, scoot out to your local supermarket and make sure to buy extra. While testing the recipe, we couldn’t keep up – they disappeared soon after coming off the grill. So good!
BUTTER UP
Something magical happens when buttered bread hits a hot skillet or griddle, right? Nothing like the golden colour and fabulous crunch that comes with grilled cheese. Yet, we pushed that buttery envelope a bit further by creating a cinnamon-sugar butter that’s both aromatic and slightly sweet. You can use this same butter mixture to make cinnamon toast, too!
APPLE JOY!
Although I used Honeycrisp apples for this story, others work too. For best results, use apples that perform well when baked, like Cortland, Jonagold, Golden Delicious and McIntosh.
CHEESE FILLING
This recipe needs a cheese with big flavours, like a sharp cheddar. Using cheddar in the recipe makes perfect sense since cheddar pairs so well with apple to create that apple pie profile. We grated the cheddar before mixing it with the grated apple so that it would melt as the sandwich warmed. The finished sammie is quite fabulous!

Here’s the deal on how to enjoy our APPLE PIE GRILLED CHEESE. Yes, the simplest way is to cut the grilled cheese in four and enjoy it as is. Serve it this way for lunch, perhaps alongside a bowl of our TOMATO or TURKEY SOUP. Ketchup also makes for a nice condiment.
We then thought to serve it as an afternoon snack sort of thing when you make mugs of our homemade SPICED CHAI LATTE, but dust the top of the grilled cheese with icing sugar – so special!
Lastly, because it’s just so darn irresistible, how about serving it for dessert? This idea has been tested and was well received indeed; make APPLE PIE GRILLED CHEESE, dust it with icing sugar and serve it with homemade VANILLA ICE CREAM. Yup, now we’re talking!
Taking comfort food to a whole new level, APPLE PIE GRILLED CHEESE is our new favourite!
INGREDIENTS
For two sandwiches:
4 slices of bread
For the butter:
2 tablespoons of butter, room temperature
½ teaspoon of granulated sugar
¼ teaspoon of cinnamon
For the filling:
1 apple, peeled, cored and grated
1 tablespoon of brown sugar
¼ teaspoon of cinnamon
a pinch of kosher salt
a pinch of nutmeg
1 teaspoon of lemon juice
1 cup of grated cheddar cheese
For garnish:
Icing sugar
Vanilla ice cream
INSTRUCTIONS:
1) Prepare butter: Stir butter, sugar and cinnamon together in a small bowl. Set aside.
2) Prepare the filling: Place apple into a small bowl. Sprinkle with brown sugar, cinnamon, nutmeg and salt. Add the lemon juice and toss. Let sit for 15 minutes. Add the cheese and stir to combine.
3) Preheat griddle, sandwich maker or skillet to medium-high heat, about 350°F.
4) Butter one side of each of the slices of bread. Invert two of the slices and divide the filling between the two slices, spreading it out evenly. Place the other two slices onto the filling, buttered side up.
5) Place the sandwiches onto the griddle, sandwich maker or skillet and cook until golden brown. Carefully flip the sandwiches over to grill the other side.
6) Remove from heat and cut into halves or quarters. Serve as is or dust with icing sugar and serve with vanilla ice cream.

Here is what you'll need!
Apple Pie From Scratch
INGREDIENTS
Pie Dough
2½ cups flour
1 teaspoon salt
1½ sticks butter, cold and cut in cubes
4-8 tablespoons ice water
Filling
2½ pounds Granny Smith apples, cored and sliced
¾ cup sugar
2 tablespoons flour
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ lemon
1 egg, beaten
1 tablespoon sugar
Vanilla ice cream
PREPARATION
Preheat the oven to 375°F/200°C.
In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.
Gradually add in ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and lemon.
Mix until combined and all apples are coated. Refrigerate.
On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch thick.
Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
Pour in apple filling mixture and pat down.
Roll the other half of the dough on top.
Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together.
Brush the pie with the beaten egg and sprinkle with the sigar.
Cut four slits in the top of the pie to create a vent.
Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains.
Allow to cool completely before slicing.
Top with ice cream and enjoy!

Ingredients crust
- 150g flour
- 2 tbsp sugar
- 2g salt
- 120g cold butter (unsalted)
- 4 tbsp ice-cold water
Ingredients topping
- 100g brown sugar
- 100g flour
- pinch ground nutmeg
- pinch salt
- 90g melted butter (unsalted)
- 1 tsp vanilla extract
Ingredients filling
- 10 granny smith apples, peeled and sliced
- 20g melted butter (unsalted)
- juice of a lemon
- 100g sugar
- 1/2 teaspoon ground cinnamon
Method
1. For the crust, add the flour, sugar, salt and ice-cold cubed butter to the food processor
2. Pulse the blade until you have reached a sandy consistency, then slowly add 1 tbsp of ice-cold water at a time until the dough comes together.
3. Remove and cover with cling film and rest in the fridge for at least 1 hour.
4. Take a 20cm springform cake tin and grease it lightly, remove the dough from the fridge and roll it out big enough to fill the tin.
5. Once you have lined your tin, place baking paper and pie weights into the pastry-lined tin and then into the freezer for 15 minutes before you bake at 190°c for 15 minutes.
6. Remove from the oven and take out the pie weights then turn the oven down to 180°c and bake for another 15 minutes, then let the pie crust cool completely.
7. For the topping, simply add all your dry ingredients to a stand mixer on medium speed. Slowly pour the melted butter in, when it starts to clump into small pebbles it's ready.
8. Take the sliced apples and mix them with the butter, lemon juice, sugar and cinnamon.
9. Add the mixed apples to the baked pie crust, you want the apples to come all the way to the top, maybe slightly more.
10. Sprinkle over the topping and bake at 180°c for 45 minutes.
11. Let it cool for at least an hour before you try and slice.
