Air Fryer -
Bake at 350 deg F. for 30 – 40 mins
For the dough –
1 cup flour
1 cup water
½ cup unsalted butter or 8 tbsp.
1/4 tsp salt or 1 tbsp sugar for a sweet puff
4 large eggs at room temp or 5 small
For the filling-
1 ½ cups cheese – cheddar or pepper jack
1 tbsp. grated butter
1/2 tsp lime pepper sauce- found under condiments
2 tbsp mayo
1 tsp Dijon mustard
eggwash - beat 1 egg with 2 tsp water

1 cup water
1/2 cup unsalted butter
Pinch salt
1 cup all-purpose flour
4 medium eggs (roughly 1 cup)
1/2 tsp lemon juice
Cheese filling:
1/2 cup finely grated cheese
2 tbsp mayonnaise
1/2 tsp grated garlic
Salt and pepper to taste
4 tsp evaporated milk
Chicken filling:
1 1/2 cup cooked chicken, finely shredded or chopped
4 tbsp mayonnaise
1 tsp grated garlic (or more to taste)
Salt and pepper to taste
2 tbsp evaporated milk

Ingredients for Puff Pastry Sheets
All Purpose flour - 2 cups
Butter - 400 grams
Salt
Lime Juice - 2 tsp
Water
Mix flour, salt, lime juice and 2 tbsp butter and add enough water to make a soft dough and refrigerate for 30 minutes. then take it out roll it into a square shape and place the butter block in the middle and cover from all sides and refrigerate again for 30 minutes. Repeat the same process 3 times.
Ingredients for filling
Chicken - 250 grams
Onion - 2
Green chilly - 2
Ginger Garlic - 1 tbsp
Chilly Powder - 1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 1 tsp
Garam Masala - 1 tsp
Cumin Powder - 1 tsp
Pepper Powder - 1 tsp
Marinate chicken with salt and all spices and keep it aside for 10 minutes. Heat oil in a pan saute onion until golden brown and add ginger garlic crushed and green chillies then add cooked chicken . Saute until all water is evaporated and slightly blend that in a blender for a fine filling.
Now roll the dough into pastry sheets and cut squares. Add filling cover it and seal it with fork. Give an egg wash to get beautiful golden color on top while baking. Now bake these in a 180 degree pre - heated oven for 30 minutes or until you get golden brown color on top.

Ingredients:
-Water 200ml (approx. 1 Cup)
-Sugar 13g (1 tbs)
-Namak (Salt) 8g (½ tbs)
-Cooking oil 50ml (¼ Cup)
-Maida (All-purpose flour) sifted 500g
-Uni puff/Shortening 350g
Directions:
-In a jug,add water,sugar,salt,cooking oil,mix well & set aside.
-In a bowl,add all-purpose flour,gradually add dissolved mixture,mix well until it crumbles & gather the dough.
-Transfer the dough to a clean working surface,stretch & knead the dough with the help of your palm for 8-10 minutes or until hard dough is formed,cover with cling film & let it rest for 15 minutes.
-On a clean surface place Uni puff & cut into pieces then mash well with the help of your palm until soft (4-5 minutes) then gather it all,shape into a block & set aside.
-Sprinkle dry flour,place prepared dough,sprinkle dry flour again & roll out with the help of rolling pin.
-In the center of the dough,place uni puff/shortening block & fold all the sides of the dough,press gently & wrap in cling film & let it rest for 30 minutes.
-Remove cling film,sprinkle dry flour & roll out in rectangular shape with the help of rolling pin,fold one third into the middle and then the other third on top,fold and overlap the remaining sides,wrap again in cling film & let it rest for 30 minutes.
-Repeat the same over lapping folding process,cover & let it rest for 30 minutes.Puff pastry is ready!
-Yields: 1100g
Tips:
-Keep prepared pastry in fridge covered in plastic warp until use if using same day.
-Puff pastry can be stored in freezer covered with plastic warp for up to 6 months.
-Always thaw frozen pastry before use.

-Bowl mein maida aur thora thora ker ka dissolved mixture shamil karein aur crumbles ho janay tak ache tarhan mix ker lein aur dough ko gather ker lein.
-Dough ko clean working surface per rakh dein aur hateeli ki madad sa dough ko 8-10 minutes ya hard dough ban janay tak stretch & knead ker lein,cling film sa cover ker lein aur 15 minutes kliya rest dein.
-Clean working surface per uni puff rakh ker pieces mein cut ker lein phir hateeli ki madad sa soft hunay tak ache tarhan mash ker lein (4-5 minutes) phir gather ker ka block ko shape bana lein & side per rakh dein.
-Maida chirak dein,tayyar dough rakh ker maida chirak dein aur rolling pin ki madad sa bail lein.
-Dough ka center mein uni puff/shortening block rakh dein aur tamam sides ko fold ker lein,gently press karein aur cling film mein wrap ker ka 30 minutes kliya rest dein.
-Cling film ko remove ker lein,maida chirak ker rectangular shape mein rolling pin ki madad sa bail lein,one third side ko middle tak fold ker lein phir dosray third part ko bhi fold ker lein,baqi bache hoye sides ko overlap fold ker lein aur dhak ker 30 minutes kliya rest dein.
-Yehe over lapping folding ko dubara karein aur dhak ker 30 minutes kliya rest dein.Puff pastry tayyar hai!

Trini Chicken Puffs
Puff Pastry or 'Pate a Choux' is a light pastry dough which is used as the base in many French desserts.
However, in Trini, we eat it as a savory appetizer. You can find these at every single bakery in Trini and they are most likely filled with Tuna, Chicken or Cheese paste. They're so fun and easy to make for events and even for breakfast, brunch or dinner.
Ingredients for 25-30 puffs
-1 cup AP flour
-Pinch of Salt
-Pinch of sugar
-1/2 cup of butter (113g)
-4 eggs
-1 egg for the egg wash
-1 cup of water to cook dough

Ingredients:
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lemon juice 2 tbs
-Tandoori masala 1 & ½ tbs
-Chicken fillet 300g
-Cooking oil 2 tbs
-Makhan (Butter) 3 tbs
-Pyaz (Onion) chopped 1 large
-Lehsan (Garlic) crushed 1 tsp
-Hari mirch (Green chillies) chopped 2
-Maida (All-purpose flour) 2 tbs
-Olper’s Milk ½ Cup
-Olper’s Cream ½ Cup
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Paprika powder ½ tsp
-Soy sauce 1 tbs
-Hara dhania (Fresh coriander) chopped 2 tbs
-Puff pastry 500g
-Anda (Egg) whisked 1
Directions:
-In a bowl,add ginger garlic paste,lemon juice,tandoori masala & mix well.
-Add chicken fillet & mix well,cover & marinate for 15 minutes.
-In a frying pan,add cooking oil,marinated fillet,apply remaining marinade & cook on medium flame from both sides for 3-4 minutes,cover & cook on low flame for 6-8 minutes then cook on high flame until it dries up.
-Let it cool then shred with the help of fork & set aside.
-In the same frying pan,add butter & let it melt.
-Add onion,mix well & sauté until translucent.
-Add green chillies & mix well.
-Add garlic & mix well.
-Add all-purpose flour,mix well & cook for a minute.
-Add milk,mix well & cook until it thickens.
-Turn off the flame,add cream & mix well.
-Turn on the flame,add red chilli crushed,salt,cumin seeds,paprika powder,soy sauce,fresh coriander, mix well & cook on low flame for 1-2 minutes.
-Now add shredded chicken,mix well & cook for 2-3 minutes.
-Let it cool.
-On a clean working surface,sprinkle dry flour & roll out puff pastry with the help of rolling pin.
-Cut in desired shape by using round cookie cutter.
-Apply water,add prepared chicken filling in the center & flip another puff pastry on top to make a patties.
-Gently press to seal & apply egg wash on top (makes 6).
-Air fry in preheated air fryer at 180 C for 12-15 minutes.
-Serve to tomato ketchup!

-Thanda ker lein phir fork ki madad sa shred ker lein & side per rakh dein.
-Us he frying pan mein makhan dal ker melt ker lein.
-Pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein.
-Hari mirch dal ker ache tarhan mix karein.
-Lehsan dal ker ache tarhan mix ker lein.
-Maida dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Doodh dal ker mix karein aur garha ho janay tak paka lein.
-Chulha bund ker dein aur cream dal ker ache tarhan mix ker lein.
-Chulha on karein,lal mirch crushed,namak,zeera,paprika powder soy sauce aur hara dhania dal ker ache tarhan mix karein aur halki ancch per 1-2 minutes kliya paka lein.
-Ab shredded chicken dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Thanda ker lein.
-Clean working surface per maida chirak dein aur puff pastry ko rolling pin ki madad sa bail lein.
-Cookie cutter ki madad sa desired shape mein cut ker lein.
-Pani laga lein aur center mein tayyar chicken filling rakh dein aur upper sa puff pastry rakh ker patties tayyar ker lein.
-Gently press ker ka seal ker lein aur egg wash laga lein (makes 6).
-Preheated air fryer mein 180C per 12-15 minutes kliya air fry ker lein.
-Tomato ketchup ka saath serve karein!
