How To make Chinese Beef and Tomatoes
4 md Tomatoes
2 lb Flank steak
3 tb Soy sauce
2 tb Dry sherry
1 cl Garlic,minced
1/2 ts Ground ginger
1/8 ts Ground black pepper
2 tb Oil
1 md Green pepper,sliced
1 md Onion,sliced
1 Beef bouillon cube
3/4 c Boiling water
2 tb Cornstarch
2 tb Cold water
Thinly slice beef on the diagonal (for easy slicing,place meat in the freezer until slightly frozen);place in a snug-fitting bowl.Combine soy sauce,sherry,garlic,and black pepper;pour over meat,tossing to coat completely.Cover and refrigerate 8 to 10 hours. In a large skillet or wok,heat oil. Add green pepper and onion saute for 2 minutes.Dissolve bouillon cube in boiling water. Add beef and marinate.Bring to boiling point.Reduce heat and simmer,covered for 8 minutes.Blend cornstarch with cold water. Stir into mixture in skillet.Cook and stir until thickened.Cut tomatoes into wedges;add to skillet;stir gently.Cover and simmer, just until tomatoes are hot,about 3 minutes.Serve hot over rice with scallions,if desired.Serves 6 to 8.

Beef and tomatoes stir fry is quick and easy. And it is so good over rice and noodles. If you prefer a beef and tomato stew instead, I have that video recipe as well
Ingredients:
600g beef
1 egg
1/2 tsp salt
1/4 tsp white pepper
5 tomatoes, medium
3 cloves garlic
6 slices ginger
3 stalks green onions
70 ml water
4 Tbsp oil
Seasoning:
3 Tbsp light soy sauce
2 Tbsp oyster sauce
1 Tbsp Chinese cooking wine
1 tsp sugar
Finishing:
1/4 tsp sesame oil
Corn starch slurry (2 tsp cornflour + 2 Tbsp water)

Ingredients:
4 Eggs
3 Tomatoes
2-3 tsp salt (depends on size of tomatoes)
1-2 tbs sugar (depends on your taste)
1 Scallion
Cooking oil
Directions:
Chop up Scallion and cut the tomatoes in wedges
Crack eggs into bowl and whisk
Heat up 2 tsb cooking oil on med/high heat
Scramble eggs just until no liquid remain, then take out eggs and set aside.
Clean pan and heat another 2 tbs oil
throw in scallions for 10 seconds, then add the tomatoes
add salt and sugar then cover pan and let it cook for 2 min.
add in eggs, break eggs apart among tomatoes, make sure all the eggs are covered in the juice.
Cook for 30 seconds, garnish with uncooked scallions and serve.
