How To make Chocolate San Andreas Cake
8 oz Semi-Sweet Chocolate,
-Coarsely Chopped (8 -Squares) 6 oz Unsweetened Chocolate,
-Coarsley Chopped (6 -Squares) 3/4 c Unsalted Butter Cut Up
9 lg Eggs, At Room Temperature
1 1/2 c Sugar
1 ts Vanilla Extract
2 tb Unbleached All Purpose Flour
Confectioners' Sugar Yield: 16 Servings NOTE: This very densed chocolate cake is named after the famous California fault becaus it forms big cracks as it bakes and cools. Adjust the oven rack to the lower third of the oven. Prehat the oven to 350 degrees F. Butter and flour a 10-inch springform pan.
Heat the chocolates and butter in a double boiler over simmering water, stirring frequently, until melted. Remove from the heat and cool to room temperature, stirring occasionally. about 25 minutes. Beat the eggs in a large mixer bowl until frothy. Gradually add the sugar and beat until mixture becomes thick and lemon-colored and ribbon forms when the beaters are lifted, about 10 minutes. Add the vanilla. Gradually add the chocolate mixture and beat well. Fold in the flour and pour the batter into the prepared pan. Bake 45 to 50 minutes, until the top of the cake begins to crack. Cool completely in the pan on a wire rack, then wrap and refrigerate overnight. Let stand at room temperature for 1 hour before serving. Remove the sides of the pan and place on a serving plate. Sprinkle the top with confectioners' sugar. For best results, cut the cake with a knife dipped in warm water, wiping off the knife between cuts. Inglês na Cozinha - Receita de Bolo de Chocolate com Ganache em Inglês (Ganache Cake Recipe)
Hoje resolvemos quebrar o molde. Vamos passar um tempo estudando inglês na cozinha para aprender os nomes das medidas em inglês, os ingredientes em inglês e mais vocabulário de receitas em inglês, além de mostrar nossos dotes culinários fazendo um delicioso CHOCOLATE GANACHE CAKE (bolo de chocolate com ganache).
De quebra, te dou algumas dicas sobre receitas e preparo que talvez sejam úteis para sua próxima aventura na cozinha em inglês ou português! Não repare a bagunça, somos amadores! ????

RECIPE (Receita em Inglês):
Dry Cake Ingredients
2 1/4 cups all-purpose flour (320g)
2 1/4 cups sugar (450g)
1 cup unsweetened 100% cocoa powder (125g)
1 tsp baking powder (5g)
2 1/2 tsp baking soda (12g)
1 1/4 tsp salt (7.5g)
Wet Cake Ingredients
3 large eggs
1 1/4 cups whole milk (240mL)
1 1/4 cups strong coffee (240mL)
10 Tbsp vegetable oil (135mL)
1 Tbsp vanilla extract (15mL)
Instructions
1. Pre-heat oven to 180 Celcius
2. Mix all the dry ingredients into a medium size bowl. Whisk the ingredients until they are evenly mixed. Using a large sieve, sift the dry ingredients into a large bowl.
3. Using a different medium size bowl, first whisk the eggs, oil and vanilla extract together. Then add the milk and coffee. Coffee MUST BE AT ROOM TEMPERATURE.
4. Add the wet ingredients to the large bowl of dry ingredients. Whisk until smooth and evenly mixed. Place in the oven IMMEDIATELY at 180 Celcius for 40-45 minutes intwo separate 9 x 2 inch non-stick pans. (parchment paper recommended)
5. Remove from oven when a toothpick comes out clean from the center of each cake.
Ganache Ingredients
3/4 lb bittersweet (53% or higher) chocolate (375g) - granulated (approx 3 cups)
3/4 cup heavy cream (33% fat or higher) (180g)
5 oz soft unsalted butter (140g)
Instructions
1. Heat the heavy cream on medium-high until it simmers, stirring constantly
2. Pour over the granulated dark chocolate and whisk until smooth
3. Whisk in the butter in small pieces
4. cover and set aside
Finishing Instructions
1. Remove the cakes from the oven and allow to cool for 10-15 minutes in well ventilated area
2. Remove the cakes from the pans and remove the parchment paper
3. Use a long knife or dental floss to remove the rounded top of each cake so the cakes are level
4. Apply 1/3 of the ganache to the first cake with a spatula, starting in the middle and spreading out
5. Place second tier of cake and finish applying the ganache to the top and sides of the cake
6. cut and serve with ice cream
Tips:
1. When the pan is cool to the touch and easy to handle, you can usually remove the cake from the pan
2. If your ganache hardens too much, reheat it using indirect heat.
3. After you level the cake, use the bottom of the cake on top for a perfect surface
