Ingredients:
12 tbsp butter, softened
2/3 cup sugar
1 egg
2 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/2 cup favorite jam
1 cup powdered sugar
1 tbsp milk or cream
Directions:
To a bowl, cream together the butter and sugar. Add in the egg and vanilla extract, mix mix mix!
Add in the dry ingredients and mix until combined.
Lightly sprinkle your work surface with flour and turn out the dough. Shape the cookie dough into a circle and quarter it. Take a quarter and roll it out into a 12 inch long rope.
Place the rope on a parchment lined baking sheet. With a wooden spoon handle or using the back of a teaspoon, press it down into the cookie rope to create a well for the jam. Pinch off each end to keep the jam from spilling out of the cookie during the baking process.
Add a generous amount of jam into the well of each cookie. Into a preheated oven at 350 degrees for 15-20 minutes depending on your oven. I took mine out right at 15 minutes.
Let the cookie rope cool for 5 minutes before attempting to slice. After 5 minutes, slice your cookies about an inch wide at a diagonal angle. Place on a cooling rack to finish cooling.
Make the Icing: Mix the powdered sugar and milk until smooth. Add the mixture to a sandwich baggie or a piping bag and drizzle it over each cookie. Enjoy!
