One Pan Lemon Garlic Baked Cod w/ Potatoes & Asparagus

INGREDIENTS
- 1 large wild caught Cod fillet
- ~3 cups fresh chopped asparagus
(~1 in pieces, make sure to remove the bottoms)
- ~3 cups baby red potatoes cut into quarters
- Extra virgin olive oil
- Seasonings: salt, pepper, Flavor God Garlic Lovers, Flavor God Lemon & Garlic.

DIRECTIONS
1. Cut the potatoes and add to a large mixing bowl. Add in olive oil, salt, pepper and Flavor God Garlic Lovers. Give a good toss then place on a baking sheet lined w/ parchment paper. Place in the oven at 400 for ~15 minutes.
2. While the potatoes are in the oven, Prep the asparagus and the cod. Cut the asparagus and add to the large mixing bowl. Add in olive oil, salt, pepper and Flavor God Lemon & Garlic. Give a good toss. Cut the cod into smaller fillets.
3. Once the ~15 minutes are up, remove the potatoes and add the asparagus to the pan. Mix and create slots for the Cod then add those next. Hit the cod with a olive oil and season the same as the asparagus. Add a slice of lemon on top of each one then place back in the oven for ~12-15 minutes or until largest piece hits 145 degrees internal.
4. Remove from oven, garnish with chopped parsley and extra lemon juice.

✅Ingredients
• 4 portions cod fish
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 softened butter
• 2 tablespoons freshly grated parmesan cheese
• 1 tablespoon all-purpose flour
• 3 cloves garlic, minced
• 1 teaspoon dried basil
• 1/2 teaspoon onion powder
• 1 teaspoon dijon mustard
• 1 lemon, juiced
• Additional lemon slices or wedges for serving
✅Instructions
1️⃣ 00:00:14 - Preheat oven to 400 degrees F and lightly grease a small baking dish.
2️⃣ 00:00:19 - Lay cod fish filets out in the prepared baking dish. Season fish with salt and pepper.
3️⃣ 00:00:32 - In a small bowl, stir together the butter, parmesan, flour, garlic, basil, onion powder, dijon mustard, and lemon juice.
4️⃣ 00:01:37 - Top each fillet with a large spoonful of the butter mixture.
5️⃣ 00:01:54 - Bake in the preheated oven for about 10 minutes. Actual cooking time will depend on the thickness of your fish. The fish is done when it flakes easily with a fork.

Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.

Cod fish is amazing! It is both nutritious and also a source of healthy fats. (we all love fatty meat don't we?) That said, it sure is the healthier replacement for our favourite pork belly :)
During the steaming process, the fats and the aroma are slowly released… cod fish meat has a delicate texture due to the high fat contents. This simple fish dish will even grab the attention of non fish lovers.
All you need to finish off this dish is a simple soy based sauce to bring out the sweetness!
