Saltfish Accra / Saltfish Fritters/ Fish Cake, soft & delicious!
This Caribbean Saltfish Accra also know as Saltfish Fritters is a favorite, easy and simple recipe but full of flavor.
Ingredients
3/4 1b Saltfish /Codfish
2 cups flour (plain or baking)
2 tsp baking powder
1 tsp yeast
1/2 tsp salt
1 tsp sugar
1/2 tsp turmeric powder for color (optional)
1 tsp all purpose seasoning
1/2 tsp black pepper
Warm water
(Finely Minced)
Onion
Garlic
Pimento Peppers (for flavor not spicy) if available or bell peppers
Scallion & thyme
Culantro or Shadow Beni (optional)
Hot pepper (optional)
Oil for frying

Cod Balls
COD BALLS
1 lbs boneless cod
4 large potatoes,peeled, cubed
1 bunch green onion, chopped
2 tbsp garlic, finely chopped
¼ cup parsley, chopped
3 large eggs, beaten
1 tbsp all purpose flour
1 tbsp malagueta
2 tbsp olive oil
1 cups panko bread crumbs
Salt and pepper
Vegetable oil,for frying
Soak cod overnight and change water a few times. Next day, place cod in a pot covered with water and boil for 15 minutes. Peel potatoes, cube them and place in a pot, cover with water and bring to a boil. When potatoes are cooked,drain water and pass potatoes through a food mill. Drain cod, shred cod with your hands or a meat grinder. In a skillet, add olive oil,onion and garlic. Cook until soft. In a large bowl,add cod, potatoes, onion mixture and malagueta mix until well blended. Add one beaten egg, flour and parsley. Taste for salt. Let mixture rest for about 30 minutes to allow flavors to blend. In a shallow dish, add 2 beaten eggs. In another separate shallow dish,add panko bread crumbs. Use two spoons going back and forth motion to shape into balls. ( can use a small ice cream scoop to form balls). After balls are all formed, place them in the freezer for about 30 minutes to firm balls and to make it easier to handle. In a pot, add vegetable oil, and with a thermometer bring oil to 325 degrees. Roll frozen balls through beaten egg then through the panko bread crumbs. Drop slowly into hot oil. Fry until golden all around. Serve warm or room temperature with tartar sauce or any other sauce

1 libra de bacalhau desossado
4 batatas grandes, descascadas, em cubos
1 cacho de cebola verde picada
2 colheres de sopa de alho picado

3 ovos grandes batidos
1 colher de sopa de farinha multiuso
1 colher de sopa de malagueta
2 colheres de sopa de azeite
1 xícara de migalhas de pão panko

Óleo vegetal, para fritar
Mergulhe o bacalhau durante a noite e mude a água algumas vezes. No dia seguinte, coloque o bacalhau em uma panela coberta com água e ferva por 15 minutos. Descasque as batatas, corte-as em cubos e coloque numa panela, cubra com água e leve para ferver. Quando as batatas estiverem cozidas, escorra a água e passe as batatas por um moinho de alimentos. Escorra o bacalhau, desfie o bacalhau com as mãos ou com um picador de carne. Em uma frigideira, adicione o azeite, a cebola e o alho. Cozinhe até ficar macio. Em uma tigela grande, adicione o bacalhau, as batatas, a mistura de cebola e a mistura de malagueta até ficar bem homogêneo. Adicione um ovo batido, farinha e salsa. Prove o sal. Deixe a mistura descansar por cerca de 30 minutos para permitir que os sabores se misturem. Em um prato raso, adicione 2 ovos batidos. Em outro prato raso separado, adicione migalhas de pão panko. Use duas colheres para fazer um movimento de vaivém para formar bolas. (pode usar uma pequena colher de sorvete para formar bolas). Depois que as bolas estiverem todas formadas, coloque-as no freezer por cerca de 30 minutos para firmar as bolas e facilitar o manuseio. Em uma panela, adicione óleo vegetal e com um termômetro leve o óleo a 325 graus. Passe bolas congeladas pelo ovo batido e depois pelas migalhas de pão panko. Deite lentamente em óleo quente. Frite até dourar ao redor. Sirva quente ou em temperatura ambiente com molho tártaro ou qualquer outro molho

1 teaspoon Garlic Powder

1 and 1/2 cups Flour
