How To make Cornell Bread
1 pk Yeast
3 c Bread flour
3 T Soy flour
3 T Nonfat dry milk powder
3 T Wheat germ
1 t Salt
2 T Honey
2 T Butter
1 ea Egg
1 c Plus 2 T warm water
Add all ingredients in the order listed, select white bread, and press "Start". NOTE: Unless otherwise noted all ingredients should be at room temperature. This can be mixed on manual of the bread machine. After Second kneading, remove dough from machine, divide into to equal portions and place in small loaf pans. Cover and let rise to double, about 45 min to 1 hour. Bake at 350 f. for 35-40 min.

Cornell bread in a Pullman pan
I scaled down the recipe a little bit too much, but it still tasted excellent! The idea of the pan is to have a soft crust loaf than is very uniform and easy to slice. I’ll go back up to three cups of flour for this use.
