How To make Cornell Bread
1 pk Yeast
3 c Bread flour
3 T Soy flour
3 T Nonfat dry milk powder
3 T Wheat germ
1 t Salt
2 T Honey
2 T Butter
1 ea Egg
1 c Plus 2 T warm water
Add all ingredients in the order listed, select white bread, and press "Start". NOTE: Unless otherwise noted all ingredients should be at room temperature. This can be mixed on manual of the bread machine. After Second kneading, remove dough from machine, divide into to equal portions and place in small loaf pans. Cover and let rise to double, about 45 min to 1 hour. Bake at 350 f. for 35-40 min.

Sweet cornbread recipe from scratch
In this video, I will show you how I make my cornbread form scratch. This recipe brings a little extra sweet to compliment and offset spicy dishes. Served as a side or all alone with melted butter, this sweet cornbread recipe is one to add to your cookbook.
1 cup all purpose flour
1 cup sugar
1 cup cornmeal
2 tsp baking powder
1/4 tsp salt
1 large egg
1 1/4 cup milk. Add in 3 separate parts
3 tbsp unsalted butter melted
Bake on 400 degrees for about 28 minutes
Maybe less time depending on your oven
More Cornell Bread
By adding three ingredients we turn our bread into a complete protein. We try adding a dough enhancer to increase how much the breads rises.

Tomato Beef Curry
1 packet Japanese Curry Roux
250g thinly sliced beef
2 large onions
2 tbsp butter
2 tbsp neutral oil
1 can whole tomatoes
2 tbsp ketchup
500mL water or stock (add more depending on consistency)
Salt & Pepper to season
1. Melt 1 tbsp butter and oil in a heavy duty pot.
2. Caramelize the onions on medium-low heat stirring constantly. This should take around 30 minutes.
2. Once the onion has caramelized, add the beef and cook until it gets color.
3. Add tomatoes and water to deglaze the pot. Scrape the bottom of the pot.
(Alternatively, add pureed tomatoes if you prefer a smoother consistency)
4. Once the mixture comes to a rolling boil, add the curry roux packet in. Mix to combine.
5. Add ketchup and finish off with butter. Serve with white rice. Enjoy!

Cornell Bread variation.
Cornell bread uses several ingredients to create a more balanced protein to make bread more healthy to eat. I combine it with the ingredients for orange cranberry bread. It needs some adjustments.
On basic white bread setting
1 1/8 cups orange juice
3 1/4 cups whole
3 Tbs soy flour
3 Tbs powdered milk
2 Tbs sugar
1 tsp salt
1 1/2 tsp gluten
One large egg
2 tsp bread machine yeast
3 Tbs wheat germ
Next time I will eliminate the wheat germ if I use whole wheat. Also I will use the whole wheat cycle.
